Brewed for the village of Vresse-sur-Semois. Contient de l’eau, du houblon alsacien et tchèque, un ingrédient régional ardennais tenu secret par le brasseur, quatre sortes de malts dont un avec du caramel et un d’orge ainsi que de la levure identique à celle utilisée pour la bière d’Orval.

Taste 02.09.2014 @ home, bottle 33 cl. from Beershop Nathalie, Bouillon. Hazy dark amber to brown color, with a little offwhite to beige head. Aroma: sour, spices, fruits and herbs. Medium body. Taste: softsweet, sourish, spices, fruits. bitterness.

Ugly, murky tan color with a white head. The aroma has some wheat and toffee notes The flavor is similar with the addition of some grass character. Medium mouthfeel and medium carbonation.

(33cl bottle) Pours a dirty dish water-like body body with small white head. Aroma of florals, herbaceous, and wort. Flavor of yeast, earthiness, sour dough, and light pepper.

Very shortlived head, muddy brown beer with a mossy sheen. Spicy nose, faintly sourish in the way cola smells sourish. Green herbs, unripe vegetables or fruit. CO² presence is overpowering in the mouth, shouldering itself into the flavour, reinforcing the sourish impression from the nose. Further spiciness, even a tad peppery, and again unripe fruit. Orval-generated as they might be, there are signs of infection here. Overcarbonated, fizzy, light body with even some acid thinning. They do manage an original beer each time here, indeed. I start wondering if they have a clue where they’re going each time?

9/IX/2012 33cl bottle from De Hopduvel (Gent) @ home - BB: III/14 (2012-1014)

Cloudy dark amber to brown beer, big aery white head, pretty stable, non adhesive. Aroma: some citrus, little malty, grassy hops, bit soapy, dusty, some overripe fruits. MF: too much carbon, light body. Taste: green apples, lemony, pretty sour, little grassy, bitter hops, grains. Aftertaste: lemony, sour touch, bit sugary, green apple skin. Not sure if infected or sour on purpose. I read it’s with the same yeast as Orval, so it probably got some bretta. Don’t think it really works in this beer though.

33cl bottle @ 8ème Fête de la Bière Namuroise. Orangée, col blanc fin. Arôme malté cara et bouquet de grains léger avec une levure reconnaissable d’Orval. Palais, malté ara laissant des traces d’épices, le tout est sec avec un fini moyen amer et herbacé gardant aussi ce profile très typique de la brasserie de Bouillon avec encore une fois une levure qui prend un peu le dessus donnant une pointe aigre, pointe de châtaigne en fin de bouche. Houblons nobles euro donnant un fini amer/sec et moyennement fruité.

33cl bottle. Hazy orange/brown with medium dirty white head. Nose : Strong soap like yeast smell with interesting aromas of pear, cherry and maybe banana. Tart and some other dried fruits. It smells like it will be sweet and little sour. Let’s find out ; Sip : Low carbonation with oily and creamy texture. I must say that the body is just the way I like ; creamy and lightly fluffy but easy to swallow. It’s sweet with tart background. Develops somehow dry feeling that stays on tongue. I was almost right when I thought It would be sweet and sour. Quite fruity background with another palate ingredient coming on top : rose. There is some bitterness in the aftertaste but it reminds more a burned toast then the one from hops. Overall : once beer gets tart and sweet , it’s possible I might never buy it again. Put apart that, It’s was fun tasting it.
