Schmetterling Gose is a modern interpretation of an ancient top fermented saline sour ale native to Saxony. Local Option Bierwerker took the task of reviving this unique style that disappeared during the early part of the 20th century. True to its antecedent, Schmetterling Gose is brewed with equal parts malted wheat and barley; seasoned with black lava salt, coriander, and hops; and fermented with yeast and lactobacillus. Light bodied, highly carbonated, pale in color, with a subtle aroma of spice and citrus and a dry, crisp, refreshing finish, Schmetterling Gose is ideal in summer months but appreciable year round.

On tap at Farmhouse, Chicago. Pours a hazy yellow. Aroma is funk. Smells like a dog that just got out of the ocean. Taste is unbelievable. Salty, briney, sea salty, with a nice wheaty mouthfeel. Finishes with a delicious, nutty, lightly roasted taste. Incredibly refreshing, flavorful. Maybe the perfect summer beer. It tastes like the beach! Thanks to the LO for bringing this style back!

(draft @ Local Option - Chicago, IL) Hazy orange pour with a thick white head. Tart and very dry aroma with some mild spice. Flavor is tart and mildly salty with a nice spice middle and a dry and tart but fruity finish.

"A very pleasing aroma and flavors of light fruits, dry yeast and a hint of funk, coriander, salt. Very refreshing brew, yet complex. Mouthfeel a little on the watery side, but really doesn’t do anything bad. Nice, unique brew."

Consumed in large quantities at Green Street Smoked Meats. Bready, lively carbonation, lemon zest, slightly grassy. Conservative spicing added to the high drinkability of this beer. Pairs particularly well with BBQ where sour qualities cut the fatiness of meat.

Keg at Cask Pub & Kitchen. It pours clear gold with a medium white head. The nose is sweet lemon, biscuit, wheat, grain, herb and barnyard. The taste is biscuit, cheesecake, herbal, lemon peel, dough and just a touch of sourness with a dry finish. Light-medium body and fine carbonation. Not sour enough for a man like myself and bit too much cheesecake.

On tap at Cask Pub & Kitchen. Appearance: cloudy yellow, tiny white head. Aroma: sour with a good dash of yeast, lime and pepper, a hint of coriander. Flavour: milder than expected from the aroma, fresh limes, yeast, a little pepper, quite a dry mouthfeel, fairly quickly dissipating lemon and yeast finish.

Draft @Søernes Ølbar. Pours an unclear yellow, under a low white top. Yellow fruits, fresh yeast, herbs and mild spices on the nose. Taste is light lemon-fruity with spice and yeast notes. A refreshing note of salt shines through. Dry, tart-ish fruit ending. Very refreshing and moreish. [22.07.13]
