COMMERCIAL DESCRIPTION
Late in November of 2011, Mike Rodriguez our head brewer asked about creating a Coffee and Cacoa Nib version of Serpent’s Stout for the San Diego Strong Ale Festival. The beer was a hit with our fans. When we wrote up the syllabus for the Ultimate Box Set, we knew a version of this beer would be included. We waited until the very end of the release schedule to put this beer in a bottle so that the coffee and cacoa nibs really come through. Four Bourbon barrels were selected for their rich and dense chocolate flavors. One week before packaging, we added 17 lbs of Ryan Brothers Coffee and 4 lbs of TCHO Cacao Nibs were added to the coffee and cacao to steep before packaging.

Bottle sample at FoBAB 2013, pours opaque black. Nose bourbon some coco. Almost pepper smell. Taste chocolate and coffee come through in the taste. Bourbon adding chartacter not overpowering. Roasty finish.

From the deep dark cellar under my house...Corked and caged 375ml bottle purchase in January 2015 at Holiday Wine Cellar ($16.99). This was the original post-Box Set bottling, I think. POURS pitch black with only a thin layover of brown foam. AROMA of lightly burnt coffee, dark artisan chocolate, roasted nuts, bourbon-drizzled brownie, charred oak, with a little bit of booze and some kind of spicy cedar in the end. FLAVOR of straight-up fudge brownie (lots of dark chocolate), creamy vanilla, gourmet brewed coffee, sticky cask-strength bourbon. Once warmed, has a really very thick and chewy mouthfeel. Some ABV heat but overall not too boozy considering the 13.4%. Had this on draft a few times at local bars and at the brewery where it never disappoints. The added elements may have declined a bit in the three years this has been in the bottle (a bit more complex on draft, actually, so I am lifting this score a bit). (395, 1081)

January 5, 2018 - bottle from BevMo. Dark pour with limited head. There was a nice loud pop from the cork, so knew would have some carbonation. Aroma was as advertised - bourbon, coffee and chocolate. Taste was consistent with aroma. Palate was a bit thin and finish was slightly dry and boozy.

Black with medium brown head. Aroma is raisins, dark chocolate, creamy coffee, slight peppers, slight bourbon flavours. Taste is creamy bitter chocolate. Low carbonation, raisins and dry chocolate in the finish. A bit boozy and spicy on the tongue. Medium drinkable. Quite heavy and spicy. Could be more balanced.

(375ml bottle from Kihoskh, no date but maybe early 2016) Pours pitch black with a small medium brown head that leaves no lace. Aroma of dark chocolate, toffee, toasty cacao, coconut, bourbon, nuttiness, moderate roast, cookie dough, light alcohol. Flavour is quite sweet with lots of dark caramel, marzipan, lots of bourbon, candied oranges, golden raisins, vanilla, light cacao, some earthy coffee, toasted wood, warming alcohol. Mouthfeel is medium, a bit slick, quite softly carbonated. This bottle has some age on it and the adjuncts might be a bit retiring as a result, but this isn't quite as complex as I hoped for - a bit sweet, barrel heavy and boozy. Very good, intense flavours, but not world-beating.
