Tap at The Birch simply as Di Como Malthus Birolla Z. Listed at 6.5%. Also listed as a sour on the tap list, which I agree with. Big foam atop inky red. Huge retention and lace. Funky nose, cedar, Brett B, grapes, salt. Taste is salty, fresh, minerally, lemon juice, Brett B heavy. Refreshing. Buoyant palate. Really nice!

Cloudy amber colored pour with an off-white head. Nose starts off with a lot of raisin, some hints of metal, and a bit of toasted malt. Light woodiness, some whisky, and a bit of vanilla. Light acetic character, too. The flavor is fairly fruit forward. Lots of dark fruit, some red wine vinegar, and sweet bread.
