COMMERCIAL DESCRIPTION
This beer is a continuation of our quest to produce distinct beers using local indigenous ingredients. Wild Sierra emulates spring in the Sierra with the snow melting out of the forests and giving way to fruity/spicy aromas of the trees with a touch of earthiness from wet soil. Mountain farmhouse style is very alive with active cultures of wild yeast continuously changing the flavor profile. We use Belgian ale yeast, Saison yeast, and wild yeast harvested off of local Piñon Pine needles in the brewing process. Our wild yeast also contains Lactobacillus which lends a refreshing tartness to the beer.

Slightly hazy golden color. Aroma is yeasty and a bit astringent with light lemony notes. Taste is yeasty and a bit tart, also quite grainy. Medium body and carbonation. Not very complex but well made and the alcohol is well hidden.

Bottle. Pours gold with a white head. Wheat and straw, a little bit of sweetness, some spicy saison yeast, faint lemon, and a spritz finish. Pretty good.

Sampled from bottle at THT March at Kwartje. Hazy golden with almost no head. Sweet malts, sugarcane, chicory, vegetal bitterness. Light sweet and moderate bitter. Under medium body. Soft carbonation.

Bottle shared at THT. Clear golden with a white head. Aroma of peppery saison yeast, herbs, citrus, light malt. Flavour is light to moderate sweet and moderate bitter. Medium bodied with prickly carbonation.

Bottle at Panamint Springs Resort. Pours brilliantly clear gold with a large, frothy white head, long retention with good lacing. Aroma is moderate pine needles, crisp cracker malt and pear esters. Flavor is crisp cracker and sweet honey malt, pine needles, pear esters and a dry finish. Light body and moderate carbonation.
