La Cucunera una birra a bassa fermentazione forte e ben strutturata.
Per produrla seguiamo le linee guida utilizzate per le birre Bock in Germania permettendoci soltanto alcune varianti sulla luppolatura al fine di donarle personalit.
Importanti per la sua riuscita sono la nostra acqua molto dolce e lammostamento in decozione. Assieme questi due parametri le conferiscono un corpo rotondo, pieno ma non pesante, snellito da una buona acidit che ne aumenter la beva.
Come accennavamo la sua peculiarit lutilizzo non esclusivo di luppoli nobili tedeschi. Tali vengono infatti arricchiti da variet americane e slovene che ben si sposano con i ricchi sapori di malto presenti in questa rossa.
Fermantata con un ceppo di lievito a bassa fermentazione, viene a lungo maturata a basse temperature prima di essere rifermentata in bottiglia con un diverso ceppo di lievito che le doner tanti sapori fruttati e la render pi complessa.

Bottle. Hazy dark red-amber color, thick beige, foamy head. Malty honey aroma. Medium dry, light sour, high bitter taste. Malty, floral, fruity, hoppy aftertaste. High carbonation, Maybach a bit too thin texture.

Tåget mørk gylden med et stabilt hvidt skum. Duften er frodig med blomster og kanel...meget usædvanlig for en bock . Smagen er fyldig og maltsød med en antydning af mørk malt men mere blomsteragtig. Sød eftersmag af mørk malt og let bitterhed. En fremragende fornyelse af bock-stilen.

Hazy amber color, compact head. The aroma is a bit earthy. Light body, moderately sweet, with malt flavor; it has a strong spicy yeast character and orange peel, and rather strong bitterness.
This would be a Strong Ale, hardly a Bock.
Not bad, but dirty, too much yeast.

Surprise! The sweet aroma makes you expect a sweet first sip - but no. This brew welcomes you with a very light souyr taste and a dry character. If this beer was a film star - you could talk about counter-casting ;-) There is still a nice accompanying sweetness, the overall character is rather smooth and dry. A nice compagnon for white meat. Nice beer from the garda lake in northern Italy. Smooth, dry and sweet - but all well balanced!
