Making it a double was the right move. It basically blows other witbiers out of the water when you do that. Lots of coriander, lemon and citrus in the nose and taste with a nice finish...graupel...not quite hail, ice pellets or snow...
One of the few white ales I have tried, Double White just becomes the most recent. Bought in a mixed six pack in Santa Fe at the recommendation of a friend. Tilting it into a tall beer glass I find a hazy, light yellow body with a quickly disappearing off-white head. The scent is fruity and somewhat grainy. The taste is green apple, peach and dough. Drank a whole six-pack at Nizhoni Ranch, New Mexico, thanks Gabe! It poured a slightly hazy golden colour with long-lasting white foam and lace. A true-to-style Belgian Wit, albeit stronger, still a subtle flavour balance, making it one of the best I’ve had by far. Crisp and grainy, soft creamy breadiness from wheat and oats, pepper and clove phenols, perceptible coriander and orange peel but not overdone as usual. Just the right amount of Grains of Paradise spice, which can also be easily overdone. Crystal hops amplify the sweet citrus essence. Light-medium body, strong carbonation, well-concealed alcohol. Can as a gift. This is cloudy yellow with a big head, certainly looks like a witbier. The aroma is not overly estery or sugary, just a stronger smelling wit. Tasteful orange and coriander back up clove, pepper, and wheat. It’s full bodied but not heavily coating. It’s not cloying, nothing is too potent. All the notes of a wit are just turned up a notch in harmony. It’s pleasantly citrusy and spicy. The beer is well attenuated with a medium-dry finish.

Can. Wheat malt aroma with notes of Belgian yeast, coriander and citrus. Pours cloudy pale golden colored with a thin, mostly non-existent white head that also has no lacing. Starts with wheat malt flavors and spicy Belgian yeast. Finishes dry, but smooth with coriander and bright citrus flavors coming through near the end. Pretty nice wit. Can,pours cloudy light golden color, no glowing white color like a traditional wit. No head, no lace on glass. Aromas of banana esters, perfume, citrus and yeast. Nutty, citrus, slight herbal quality. Thick creamy head. Cloudy, tangerine appearance. Spicy on the palate, warm to swallow. Slightly bitter citrus peel flavors. It’s fine for the style, I suppose. Beer #52 of NM 100. Sweet, unfortunately. But nicely yeasty. Sufficiently dry.
