Notes from my backlog: Hazy amber pour with an off white film of head. Aroma is quite spicy- minty, juniper, lavender, biscuit undertones- unique. Spicy in the flavor as well. Lavender, mint, some woody bitter tannins. A touch of vanilla on the back as it warms. Vanilla and lavender resonate on the back. Not bad.
Bottle, October 2009 vintage. Pours a clear dark amber body under a frothy active beige head. A rather energetic foamer when I cracked the cap, but it behaved rather well once it was in the glass. The nose is super funky and bretty with lots of vinous qualities and a nice oakiness. It smells a bit like a mix between a dark saison and a Flemish red. The flavor is still pretty damn interesting, even after all these years. A nice subtle funkiness with plenty of oak and vinous notes. Fairly heavy on the malt still as well, this really stands up well to 5 years of time in the bottle. Finishes with a lingering oakiness and some earthy yeastiness. Just the lightest bit of dark fruit notes towards the back end as well with a sour cherry like flavor. Medium bodied and extremely drinkable for this high of an ABV. Nice soft gentle carbonation after it rested in the glass for a bit. Really an excellent beer, and quite a surprise with how amazingly well this has held up. Thank you Vince and Tom. Pours clearer amber like a cognac with a big bubbly beige head that dissipates quickly. The aroma brings sweet malty oak barrel and wild yeast. The flavor has gone quite wild in 2 years maintaining the wine-like acidity described. The body is not thick and a bit cleaner than expected. Still drinking well after two years for sure! How: Bottle 750ml. Consumed 9 months after bottling date. Another one of the too many beers dumped in my cellar by Dickinsonbeer. I hate you Paul.
The look: Cloudy golden orange body. Medium beige head with good retention leaving lots of lacings on the glass.
In long: Nose is moderately rustic, dusty attic, some fruits (grapes mainly), some wood. Taste has a lot of wood. Vinous wood barrel, woodshop 2x4 lumbers, sawdust, you name it… lots of wood. The beer is also a bit vinous (white wine vinous) with some tannins. It also feels fruity although no specific fruit comes out. Does not feel particularly wild or bretty, but certainly very rustic. Sweetness is not typical caramel/honey, more like sticky tree sap. Body is quite heavy for the style but never does the beer feels sweet or nourishing. Carbonation is very lively and the mouthfeel is very satisfying. Just a whole lot of wood in a bottle. This beer is tasty, heavy and the finish is extra dry. This is not a thirst Saison, this is more like a sipper. What a crazy beer. That beer was harder to figure out than a IKEA instruction booklet. And if you ask me, IKEA’s definition of "some assembly required" is "Here’s a tree, a saw and some nails."
Bottle, pours a very dark, clear burgundy with a thin soapy head. Nose is huge red wine barrel, some red berries, Belgian yeast and some brett. Flavor needs some time in the glass to blossom, as at first it’s just this massive, acetic red wine barrel that overwhelms everything. A touch medicinal. With some time the barrel kind of calms down and raspberries and cranberries come through. Quite a lot of wet wood with some musky wild yeast. A bit sweet for my liking. Finish is a lot of barrel and kind of muddled with that acetic quality coming through a tad. Overall this has some merit -- it’s a nice style, reminds me a bit of Beekeeper but clearly without the finesse, and the flavors are rich. Certainly a nice effort and I’d like to try an aged bottle at some point. After trying 4-5 McKenzie oak-aged offerings I think these guys need to play with subtleties more instead of just going for huge wine barrel as they do here and with Cuvee McK. Good but I’m done giving them brownie points just because they’re small and local.

Another bottle from hopdog, thanks Steve. has a light gush from the bottle and then a big head, beautiful head with a sticky lacing. Aroma is, well, divine. First there is light cherry brett, than strawberry bubblegum (not from esters), and some unobtrusive grainy barrel. Brett is present with some sweet Belgian maltiness. Flavor thins out a bit more, its brett-centric, with sweet pit. This evaporates nicely off my palate and a nice aftertaste of musky and mineral flavors. A bit of a bitter grainy kick at the end. Underrated beer for sure. This should be at least a tenth or two higher, as it is a perfect reflection, I guess, of the old Southampton Biere de Mars. I love, love, love this kind of malting. Softly spicy, leathery, plum roll fruity, with a great hop bite. Excellent beer, easy to drink. Also similar to JP’s Biere de Mars, which when on is a lovely beer. This style is perfect. Pours a hazy brownish amber with a big rocky head that recedes to a solid cap and leaves spotty lacing. The body is very active with tons of bubbles streaming to the top.
The aroma is funky and acidic with earthy yeast and plenty of vinegar in the nose as well as some leather. There is a bit of sugary sweetness and plenty of spicy oak with an intriguing juniper/mint thing going on.
The taste starts off with a seriously dry and funky kick with leather and barnyard all over the place. Some grapes and brown sugar mixed with vinegar, but the finish is exceptionally dry and astringent, with the oak tannins dominating in the end.
The mouthfeel is active and extremely wine-like with a funky astringency throughout. The finish leaves a burn.
This is a big ole funky saison with lots of complexity but dominated by the dry funk and oak with some interesting herbal and minty components. Very interesting.
