COMMERCIAL DESCRIPTION
A warm and spicy metheglin style, Mabon balances just the right amount of coriander, cardamom, cinnamon and nutmeg with pure BC honey. Pairing well with walnut and goat cheese salad, herb encrusted lamb and your favourite leather chair beside an evening fire.

Bottle sampled at Meadow Vista, pours a clear water colour. Aroma brings out lots of spices, especially the cardamom upfront. Flavour is similar, with lots of cardamom upfront, light coriander, and light sweetness. Not especially complex or well-blended. Itís okay, but there are much better spiced meads out there.

Lots of cinnamon, nutmeg in this one. Fairly light body for its size. Sweetish finish, but not enough sugars to carry these types of spices across the palate in a pleasant way. The spices just seem harsh and disjointed as a result.

Visual: Pours white wine yellow without any bubbles. Nose: sweet honey wine mixed with distinct cinnamon, cardamom, and nutmeg, very clean. (lvl-8)-pungency Attack: somewhat watery mouthfeel, incoming acidic sweetness Mid-palate: (lvl-3)-sweetness, alcoholic bitterness, (MAIN) red apple, light honey, white grape, green cardamom/cinnamon/nutmeg Finish: tangy-sour acidity, alcoholic throat warmth, coriander, medium tart apple-fruity off-dry finish. Summary: Although a little "thin"-feeling on the palate, this mead is well-balanced in flavour, alcohol, and complexity.

The aroma of this Mead has almost a herbal touch, not seducing. The flavor is semi-sweet, with mild spices (they use the usual mix of 5 (cinnamon, nutmeg, coriander...), and light fruitiness. Refreshing, pleasant.
