Bottle 750ml.
Unclear light to medium yellow color with a large to huge, frothy, good lacing, mostly lasting, white head. Aroma is moderate to heavy apple, sour feet - unwashed feet, chees, vinegar, rubber, baking yeast. Flavor is moderate sweet with a average to long duration, baking yeast, dry dry. Body is medium, texture is watery, carbonation is soft. [20100409]

75 cL bottle. Pours hazy to murky yellow with a huge fizzy white head leaving a small white film on the top. Distinct barnyard and citrusy apple aroma, light yeasty note too. Rather dry and citric flavoured, light yeasty and dry brettish. Immediate finish is dry and citric. Far finish has a distinct flavour of thai/chinese rice chips. Too much going on with champagne and brett yeast at once imho, but certainly a unique cider.

Bottled. A hazy dark yellow cider with a huge very fast disappearing white head. The aroma has notes of apples, yeast, and barnyard. The flavor is sweet and acidic with notes of unripe apples, yeast, and barnyard, leading to a dry and tart finish. Not your traditional cider, bun an interesting experiment.

Bottle at home. Hazy pale yellow coloured with a medium sized white head. Aroma of apples, cereal, brett and glue. Light acidic flavour of yeast, brett and cereal with notes of apples. Yeasty finish. Weird cider.

Bottled. Slightly hazy yellow colour with mediumsized white head. Aroma is apples, some sweaty socks, mild cheese as well as some yeast. Flavour is yeast, some apples, mild earth and herbs. I think this is the worst product I’ve ever had from Mikkeller...

Papsoe (25054) - Frederiksberg, DENMARK - APR 9, 2010
Bottle 75 cl. Courtesy of joergen. Pours an almost opaque milky white with a very lively white head. Aroma of vinegar and Brett. Light body, dry and rustic apple notes, a little vanilla with very dry and dirty vinegar accents - not sour at all though. The carbonation is excessive. Poor. 090410

Rasmus40 (22128) - Beder, Aarhus, DENMARK - APR 15, 2012
Clear pale yellow with a white head. Aroma is sweet, apples, bretty and baking yeast. Flavor is quite sweet and light acidic. Dry and light acidic finish. Watery. 140412

Tasting at Papsø
Cloudy pale blond color. The aroma is incredibly smelly and cheesy (if you want to know, many semi-soft cheeses from pre-Alps, feet too); this covers some citrusy sourness, and light plastic. The flavor is dry; as everybody knows that the nose has a connection to the throat, it’s impossible not to feel the cheesy presence even in the flavor. The finish is a bit cheesy (guess that), astringent and woody, but short as well. Nothing close to a good Cider.

saxo (19569) - Højbjerg, Aarhus, DENMARK - AUG 13, 2011
Bottle from Liva. Small head with very short duration. Color is hazy pale yellow. Aroma and taste are nice tart apples and has a nice dry finish.

chrisv10 (18702) - DENMARK - APR 1, 2010
75 cl bottle. Hazy milky yellow body with white head. Flavour is apple, dry and sour.
