Bright Raspberry jammy aroma with loads of red wine port and sangria tones and more raspberry purée and deep dark fruity Belgian malts. Huge complex flavor that’s slightly tart with a raspberry purée tone right up front, mellowing into lots of dark Belgian candy sugar, a little raisin, and a smack of caramel covered red wine berries and notes of port and sangria. Reddish brown colour with a red head.
Aroma is raspberries, molasses, toffee, prunes, spices.
Taste is raspberries, tart, sour, wine.
Medium to full body, average carbonation.
375ml bottle. Almost black colour with average to huge, thick, frothy, fairly lasting and lacing, beige head. Slightly vinous, tart-ish and earthy, raspberry aroma, a touch of marmite. Taste is slightly tart, fruity, bitter, notes of marmite, hints of dashi, some raspberry, minimally oaky, tannic, red wine overtones.

Bottled. Pours hazy deep brown with a small beige head. Aroma of raspberry, funky notes, spice, vanilla and wood. Sweet flavor that ends up being dry and tart with some alcohol. Deep mahogany with a tan head. The aroma blooms out of the bottle the moment you open it. Upon pouring it, a rich and unusual cocktail pervades the air. An overwhelming combination of dried fruits: cranberries, figs, raisins, prunes and raspberries. Strong cassis syrup. A distinct Panettone, fruit cake aroma, filled with honey, vanilla, doughy notes, and lots of spices, especially clove and anise. Quite a remarkable aroma. The first sip took me by surprise. Dryer than I expected from the almost cloyingly, glazed sweetness of the smell. A burst of raspberry jelly explodes on the tip of the tongue while bitter coffee and chocolate provide sharp contrast. As it progresses on the tongue, a syrupy, malty sweetness emerges. Maple syrup, molasses, but also a bready, yeasty, slightly salty vegemite sharpness comes through. I am not sure what to make of the flavor. It certainly has complexity and intriguing qualities, but it feels like less than the sum of its parts. Monk’s Brew finishes on a long dry aftertaste with a bit of funky sourness and that salty bread-like character. A beer that challenges your tastebuds and defies categorization. Flaska från Beergium. Lyxöl på uppståndelsedagen. Mörkröd grumlig vätska med tunn vitrosa skumkrona. Bärig doft av hallon, lätt syrlig, körsbärssylt, vinöst. Halvstor kropp, något torr. Inledande syrlig smak med besk och bitter avslutning. Fortfarande en del körsbärssylt. Lite spretig och mycket av varje. Lite väl bittra toner som tar överhanden, hade gärna fått ge mer utrymme åt friskheten och syrligheten från hallonen och brettjästen. Vinlagringen märks av, men hade gärna fått ta mer plats den med. Mja, ingen höjdare, men kul ändå!
