Brewed by Mikkeller at De Proefbrouwerij in Lochristi, Belgium. Known as Monk’s Brew in the U.S.
Ingredients : Water, malts (pils and pale), candy syrup, brown sugar, hops (northern brewer, hallertauer and styrian goldings) and ale yeast
Monk’s Elixir is a heavy dark Belgian ale inspired by the Trappist monasteries of Rochefort and Westvleteren. The beer style, characterized by its high content of alcohol, distinguishes itself by its dominant yeast character, delicious malt background and balanced hop notes.

Tap, Olfestival. Clear redbrown color, short brown head. Aroma of caramel malt, cookie, some roasted notes, candy sugar. Good strong taste, quite sweet from the candy sugar, nice mix of caramel and roasted malt, some dried fruit even. Slight alcoholic palate. Reminded me of the Pannepot.

(Draught at Ölbaren, Copenhagen, 18 May 2007) Dark brown colour with brief head. Malty, sweetish and rather ... brownish nose with hints of herbs and cola. Malty, rather sweet taste with chocolate, dark fruit, raisins and figs. Balanced, but not really complex.A good try at the styel, though.

Bottled: Nice sweetish aroma. Dark brown colour with traces of red. Head doesn’t last as long as the trappist beer it is modelled over. Starts out with lots of malt sweetness, then a lot of bitterness (considering the style) and I agree with the last rather: it finishes with an almost pepperish spiciness. A nice beer, not as good as the best Belgians - but wow, does it mask the 10%...

On [email protected] B, Copenhagen. A dark brown pour with a ruby shine. One finger lasting creamy chocolate head. Sweetish dark malts, candysugar and yeast to the nose. Some fruity and spicy scents as well. Full-flavored and complex. Sweet fruity, sweet malty and yeasty; prunes, raisins, caramel and cocoa. Very healthy body. Silky mouthfeel. Finish is dry and surprisingly short.

Thick, creamy, beige head leaving a fine lacey film above dark brown beer, fully opaque. Very fruity nose with background hints of both chocolate and coffee. Dark, ripe fruit as plums, grapes, but also peaches and medlars; alcohol and some serious fusels. Fruity, sweet background malts at first, followed by serious bitterness, on the verge of metallic. Bitter dark chocolate, overripe plum, pipe tobacco. Long bitter, chocolatey aftertaste. Full bodied, velvety MF, hint of alcoholwarming. Rich ideosyncratic Mikkeller brew: overhopped, powerful. Aromatically speaking fruity-estery, but flavourwise, the full bitter chocolate dominates.

Sample at West Lakeview Liquors tasting with Mikkel. Pours to a hazy mahogany body with a thin wispy off-white head. The aroma is very estery and yeasty. Malts are nice in this one. Raisins, butter, and wine. The flavor is sweet candi sugar, raisins, yeasty esters. Buttery biscuits, bananas, dry spices. The palate is dry, light, and refreshing. Finishes pretty clean.

Poured in the presence of the Man himself! Translucent copper with a short off-white head. The aroma picked up deep caramel and dark fruity sugars with some prickly, leafy hoppage.. came off as dry and very well-presented. The flavor found toasty caramel and sweet darker fruit sugars again with moderate floral hoppage that stuck through the finish.. nice yeasty esters throughout. Medium-bodied with nice balance between the sweet notes, yeast, and bitterness.. warm, quite dry, and almost grainy at the back-end and finish.

Another from the yesper collection. Apple toffee on the spicy nose malty nose. hazy brown color with some head. Smooth body with spicy malts and dark fruits.

Clear dark red to brown color, big bubbly tan head. Scent is mixed chocolate, sweet, fruity, yeasty, very nice. Strong vinous, raissin, sugary, sweet and alcohol taste. Warming alcohol. Yeasty aftertaste. Smooth mouthfeel, low bitterness.

Hazy dark red color, tan head. Sweet, fruity, caraml, red berries scent. Sweet, spicy, licorice, malty taste. Medium mouthfeel, medium high bitterness. Red berries aftertaste.
