Brewed by Mikkeller at De Proefbrouwerij in Lochristi, Belgium. Known as Monk’s Brew in the U.S.
Ingredients : Water, malts (pils and pale), candy syrup, brown sugar, hops (northern brewer, hallertauer and styrian goldings) and ale yeast
Monk’s Elixir is a heavy dark Belgian ale inspired by the Trappist monasteries of Rochefort and Westvleteren. The beer style, characterized by its high content of alcohol, distinguishes itself by its dominant yeast character, delicious malt background and balanced hop notes.

This beer smells very lively. Lots of stong malt, fig, spice, earthy notes at first. After a while it smells very doughy, with some fresh alcohol and candied sugar notes. Flavor is just superb in its smoothness. It has the flavor and delicacy of a some fresh salad greens. It really reminds me of biting into some very clean and fresh dark greens. The palate is simply something to take a vacation into. It just wraps the mouth in this softness that rivals a milk chocolate mousse.

I have wanted to try something from Mikkeller for a long time, never could find anything. Finally located Monk’s Brew in Santa Fe. All right. Chilled before pouring into my New Belgium globe glass, a dark almost black liquid along with a wispy light tan head that shows signs of lacing. But enough of that. The nose is inviting, dark fruit, malt and yeast. Enough of that too, I want a drink. Hey now, pretty fine. There is malt, raisin, something herbal, a slight toffee sweetness. It finishes with a pronounced bitterness, surprising. Comparable in taste to Rochefort Trappistes, not at the same level though.

Bottle 0,33. Pours dark ruby with large off-white head. Roasted malts, brown sugar, dried fruit, raisins, caramel, yeast. Texture is a bit oily, full bodied woth soft carbonation.

UPDATED: OCT 27, 2017 33cl bottle at home. Pours a dark slight hazy mahogany colour with a big beige frothy head. Aroma of dark malt, slight roasted, candy sugar, spicy yeast, dried fruit. Taste is medium sweet, soft bitter with a soft dry finish. Notes of dark malt, candy sugar, caramel, yeast, raisins, slight roasted malt. Texture is oily to creamy, full bodied woth soft carbonation

Under the name of Monk's Brew. Almost black with rich creamy beige head. Slight yeast and roasted grain aroma. Mild slightly sweet fruity taste with some sourness and followed by good bitterness rich of roasted notes. Lasting bitter aftertaste.

Brune sombre, forte mousse beige. Nez biscuité au bubblegum fruits rouge pas mal. Gout biscuit, candy, caramel, fruit rouge, un peu malté et cremeux, note bubblegum, ffigue , chocolat, alcool, rond en bouche, nickel comme triple! Saveurs bien longues en bouche.

Bottle. Hazy deep brown with ruby highlights. Beige head. It is tall dense and stable. The aroma is dark malts, dried fruit, spicy yeast. Medium to full body. Light to medium sweet complex taste. It is hard to analyse the components because of good balance. Malts, yeast and hops play together. Not without booziness. Take care.

330ml bottle. In the cellar for a little over three years. Pours a clear burgundy with a creamy beige cap. Smells like candy. Dates, light spice, faint booziness, marzipan, pecan pie filling, and a light maple note. Taste wise, lighter bodied than expected and sweet with dried fruits, light molasses, dark rye bread, faint amaretto, and light earthiness that heads into some alcohol, more dried fruit, and stronger malt notes with a earthy, mineral heavy finish that also features some plum.
