Danish: Brygget af basismalt og under mæskníngen og gæringen tilsat enzymer for at opnå en så høj forgærbarhed som overhovedet muligt. Til både bitter-, smags- og aromahumle er brugt den New Zealandske humlesort ‘Nelson Sauvin’ som er opkaldt efter sine druekarakterer, der bringer minder til den New Zealandske hvidvinsdrue Sauvignon Blanc. Af gær er benyttet både champagnegær og brettanomyces og pga. enzymerne er øllen gæret meget langt ned og dermed er slutresultatet en meget tør øl. Efter endt gæring har øllen ligget 5 måneder på hvidvinsfade fra Østrigske Weingut Kollwentz og opnået yderligere karakter. Til slut er den flasket på 750 ml champagneflasker med et ekstra højt CO2 indhold.

English: Nelson Sauvignon is a New Year beer it is fermented with ale yeast, brettanomyces and enzymes. Then it has been aged three months in Austrian white wine casks. Very dry, very vinous and very delicious.

Pours a lot darker than I was expecting - I’m not sure why, but I was expecting a pale light beer, not rich amber with a fantastic bit of tan foam and ample lace. The flavor is unique, and interesting blend of faint strong Belgian ale in the background, and full on brett in the foreground. Aroma is very complex as well well, toasted and vinous. Off hand, the only thing I can remember drinking that struck me to this extent was a Beatrix. That was a long time ago...

Piwo koloru bursztynowego z konkretną czapą białej piany. W aromacie nuty winne, skórzane, lekka obora, trochę cytrusów i trochę owoców tropikalnych. W smaku lekka stajnia, tropikalne owoce, skóra, grejpfrutowa goryczka, ziołowość. Nie jest złe, ale piłem lepsze bruty.

Smak och doft choklad, malt, kakao, choklad, kaffe, vanilj. Smakar som en frisk och syrlig porter/stout, om detta är en svart IPA eller en saison råder det en viss förvirring om. FIn beska.

Can at home. Copperish-orangeish colour, with a finger of white head with good retention. Nose is light sourness, with definitive whitewine notes. Taste is low bitterness, faint sourness. Longlasting sticky bitter aftertaste. Strong alcoholic warmth. The nose is brilliant, sadly the taste doesn’t deliver as much.
