Bottle at Kasey’s Tavern in Chicago. Aroma of wet leather, dirt, band aids. The palate is creamy, buttery, and oily. Lots of funky yeasty barn yard flavors. Earthy and citrus too. Well attenuated. Lactic, creamy, yet acidic. A rare find, enjoyed it alot, in my favorite bar in Chicago. Glad I called out sick today.

Light brown in color with orange shades. Haze. The nose acidity is gentle, well mixed with funny and interesting funk notes. The sourness in the mouth immediately gives way to more sweet notes, light sweet-sour notes coming from grapes. The great body, the nice carbonation and a near-perfect balance make it easy to drink. It leaves a complex and fresh mouth. Fantastic beer

Nose has acetic, lemon juice, white wine aromas.
Mouthfeel is juicy. Palate has some nice wheat malt flavors of wheat flour, raw dough. Other flavors for this one are a ton of white wine flavors and grappa like tannin finish. There is a brief fruitiness that evaporates into a dry, dusty, woody palate. Dry and very pleasing. Tartness is there but a lot less aggressive than some other lambics in the Spontan series, like the triple berry for example.

Bottle (375ml) as "Spontansauternes" with BB of 15/1/23. Quite noticeably sour rivalling Cantillon with a barnyard lemony funky tart dry finish. Medium body, lively mouthfeel, hazy deep golden appearance, loose white head that settles to a stable collar. The brewer knows his stuff.
