What is the lightest beer in the world???
What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least. Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water. When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.
After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

UPDATED: MAY 24, 2013 Alcohol is amazingly masked. Aroma is soft and bready with subtle fruit notes. Mouth feel is near jammy. Appearance alone makes me want ro drink this beer.

Almost clear gold beer, small pale cream colour head. Palate is smooth and semi dry, good fine minerally carbonation. Light dry and sweetish malts. A light brandy, almost apricot brandy. Alcohol spice still evident even though this bottle has a few years on it. Touch of dessert wine and mild dried fruits. Light dry finish. If you have one of these in the cellar, I reckon it was last several years more.

Bottle. Creamy white good mostly lasting head. Dark yellow colour. Moderate malty and light hoppy aroma. Light bitter cheasy flavor. Average mderate bitter finish. Oily palate.

Bouteille qui, selon mes recherches et les différentes évaluations qu’on trouve ici, semble datée de 2012, donc bue après plus de 4 ans. Trouvée d’ailleurs dans un beer store de banlieue peu fréquenté, donc ça se pourrait. Robe orangée légèrement trouble et remplie de particules en suspension, surmontée d’un mince voile de mousse. Arômes d’alcool, sucre d’orge et caramel salé. Beaucoup de fruits aussi, surtout du verger: sirop de pêche, pomme un peu fermentée, poire bien mure. Nez très intéressant qui ne laisse pas transparaître le haut d’alcool. En bouche, plus malté, goût de caramel et cassonade suivis de saveurs fruitées tels pêche et poire. Un goût d’alcool pur envahit le palais avec un petite sensation de sécheresse ainsi que poivrée. Un peu d’orange, abricot et herbes séchées. Texture huileuse et corps moyen à rond. Très belle expérience mais personnellement, vouloir atteindre un si haut taux d’alcool avec une si faible densité enlève beaucoup de corps à cette bière tout en laissant l’alcool s’affirmer un peu trop. On se retrouve avec un bière intéressante mais sans complexité et un certain manque de saveurs.

Hazy orange body, thin ring of head persists.
Full on aroma - stacks of citrus rind, malt extract, Angostura bitters, and fusel alcohols.
Long drawn out body, slick, obviously well-attenuated but has substance.
Not unenjoyable, but intense body - bitter orange rind, peach stone, pale malt syrup, raw sugar, very spirity. Reasonably bitter, very warming finish.
Interesting but very boozy, kinda difficult to drink.

33cl bottle. Medum off-white head atop murky apple cider body. Aroma is moderately sweet, fruity, boozy, light bread. Taste is moderately sweet, boozy. Light-medium body, light stickiness.

330ml bottle. Almost clear golden color with white to off white head. Malty aroma, light grainy, caramel, bready, sweet citrusy fruity, alcoholic, light spicy yeasty. Sweet and light bitter alcoholic taste. Medium oily to sticky body with soft carbonatio.

Bottle at Café Viking, shared with Rune. Low but lasting white fluffy head. Hazy dark orange body. Alcohol peach hops grass aroma. Exotic fruits with a spicy note and a good deal of hops bitterhess, high carbonation, long bitter finish.

Bottle. Pours a hazy golden color with a small white head. Aroma was hoppy with fruit, citrus and alcohol. Flavor was sweet and fruity with citrus, caramel, alcohol, straw and had some earthiness. Oily texture, medium-full body, soft carbonation.
