COMMERCIAL DESCRIPTION
A sumptuous golden color, comforting aromas of wild strawberry jam and crystallized pear tease your gourmet nose followed with a floral note of lily of the valley. Its complexity unfolds finely into notes of maple syrup, dried figs, crystallized apricots, buckwheat honey and fresh strawberries. Consistent with traditional cider making, this Cuvée is expertly made from 100% Golden Russet harvested at the peak of Quebec’s winter. Its limited edition production makes it even more precious. For true gourmet, enjoy slowly with canapés, foie gras or fine dark chocolate... and in good company of course!

Sample at the cidery. Deep gold amber pour, nice liquory texture. Aroma is sweet, caramel, lots of maple syrup, candied apple. Taste is sweet, rich caramel maple flavor. Palate is full bodied, liquory, light stickiness, very nice. Good stuff.

[2009, 7/1642] Pours deep golden/light amber with no head. Some legs. Aroma is of sugar, apples juice, apple pits, red apple peal, some pears. Taste is of sugar, apple juice, some acidity, alcohol, pears, very slight underlying tartness. Palate: Full bodied. No carbonation. Sticky. Not too sweet. Overall: Very nice. Warming alcohol.

Appearance: Deep golden-copper with nice legs.

Aroma: Softer than most Ice Ciders made with the cryoextraction method, but also less sweet. Nice strawberry presence along muted apples, mild brown sugar presence and light spiciness.

Taste: Moderately sweet. Quite fruity with red fruits/strawberries presence along red apples and peaches/apricots. Mild spicy presence (cinnamon, nutmeg), brown sugar notes and mild acidity. More expressive than the aroma. Alcohol is very well hidden.

Palate: Medium body. Oily mouthfeel. Strawberries finish with nice a mild cinnamon/nutmeg aftertaste.

Overall: World-class Ice Cider! Not boozy at all. The strawberry/red fruits presence the most distinctive feature compared to other ice ciders. Well balanced and really tasty.

2009 vintage, thanks to tom10101! clear medium dark golden orange, pink tint - fire cider-like looks, showing off its legs moreover - geez. buttery apple pie, browned apples, other orchard fruits cooked in a crust, raspberries, raisins, brown sugar, woodsy and umami hints, spices. flat carbonation, medium body - oily and sticky; sweet and buttery-spicy finish. very nice!

Bottle with Paul. Pours a deep reddish Amber. Aroma is strawberry and rasperry jam. Mouthfeel is thick and rich with notes of raspberry, cherry vanilla, melted butterscotch, applesauce, cinnamon and strawberry smoothie.

Bottle: Poured a deep dark copper color cider with an oily like texture. Taste of sweet apple is quite intense but still well balanced and not overly sweet. Complex notes of apple pie and brown sugar caramel are really interesting while being also easily drinkable.

[4499-20120609] Bottle. Sweet apple aroma has a pleasantly smooth fruity base with apple pie filling-like fruit and something pungent in the background, almost like a pineapple. Clear, dark yellow body with no head. Super sweet apple juice has a touch of brown apple flesh in the finish and a mellow brown apple aftertaste. Medium body. Dark golden yellow body, crisp. 3+ Sweet fruity aroma, lychee and tropical fruit is more like ice wine than typical for ice cider, hints at fruit skins in the background. 7+ Flavour is sweet up front, sugary but pleasantly so, sweetly fruity, whisps of apple, pear juice, finishes pleasantly sweet. Smooth medium to full bodied palate. Really nice. Bottle at Mondial, Montreal
