12 oz bottle I picked up at the pig. Pours a cloudy amber color with a small white head that has good retention. The aroma is slightly spicy with white pepper and some fruity grains(Belgian Pils?). The flavor is complex and features white fruits, pears, apples and apricots giving way to peppery hops and nutty yeasts. Somewhere in there is a bit of biscuit. The palate is medium with lively carbonation. Finishes incredibly long and dry with lingering pepper. Bottle - Pours clear yellow with a nice foamy white head. Nose is light, delicate spice--clove, cardamom, white pepper--with some banana notes and light, dusty yeast. Wow...loving this nose, and I wasn’t expecting it at all. Taste is mellow tropical fruit, apple, pear, a touch of spice, and the same dusty yeast, though subdued. A bit of mustiness, but really, really smooth. Get the oats on the finish, and I’m wondering if that’s what’s giving it the big, smooth, slick body. Carbonation is a bit too high, but that’s all that stops this from being something I could drink all afternoon. Loved this one, and it was totally unexpected. Nice mouthfeel, great golden hue, Saaz hops on the nose, spice character from the Saison yeast.

It pours a nice gold with a large, foamy white head.
The smell is unique. It has a noticeable sourness to it with some vinegar, but also dominating characteristics of a saison yeast, it is big and spicy.
The taste is similar, spicy with a hint of tartness. for the abv it is pretty refreshing actually although the sweetness is there.

Orange-gold pour with an ample white head that quickly settles down. Nose is cinnamon, spicy rye, a bit of anise, and plenty of yeasty, rustic charm. Very nice. Flavor reminds me of tangerine marmalade spread over a tender, flaky biscuit and dusted lightly with fresh ground black pepper. Carb is slightly aggressive, and the body seems a little slick. The perceived sweetness in the finish holds it back a bit.
Interesting and enjoyable beer that I am glad to have tried. Great nose that I wish I could capture and carry around with me. Booyah body spray? Thanks, Matt!

Guest tap at Emmett’s, Downers Grove. Autumnal brown with a one-finger parfait head. Spicy wassail nose, a bit of fig and yeast, too. Malt and mouthfeel is light, but it has a dose of caramel roast, augmented by coriander, sage, and some European hop backbone. Touch of cider at the end. 12oz bottle. Hazy orange-tan, thin fading white head. Interesting funky sour aroma, not off. Medium to full bodied, has a nice thick golden malt base. Balanced by the funky sour Saison yeast, has some lemony bitterness, a bite up front that fades into an earthy faint sourness. This is really quite nice, and while it doesn’t exactly nail the style, its a really pleasant, well executed interpretation.
