Tap at the brewery. The thyme is really standing out at the forefront of the flavor and aroma of this beer now. I did not think I would like it, but I had a sample and it was not bad at all.
Tap at Monkish Brewing. Pours clear dark amber to tawny with a medium, creamy off-white head, short retention with good lacing. Aroma is rosemary, cookie and toast malt with dates, earthy hops. Dark amber pour with an off-white head. Very strong herbal thyme aroma. A bit lemony and almost tart. Notes of grass along with the sweet malt notes of bread, toast, and caramel. Some banana, dark fruit, and cola as well. The flavor is a little too acidic and herbal for my liking. But, the finish does have some nice banana and caramel flavors. Another winner from Henry at Monkish. Has a nice spice profile. I did not pick up thyme but it has a definite hit of herbs. I got a dominant nutty note as well. Almost liquid fruitcake here. On tap. Pours with a hazed deep amber-brown hued body with a lasting tan head. Aromas are of thyme, almost savory/gamey/meaty, rosemary, herbaceous, toasted grain, pine, medium-low esters. Flavors are spicy, thyme, savory, grainy, toasty, rosemary. Medium fruity. Lively carbonation with medium body.
