Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesnt get much closer they have their beer brewed by the monks of Chimay!
Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.
A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Bue en bouteille de 75cl dans la nouvelle maison de Will, couleur bruntre presque rouge, effervescence et mousse moyenne. En bouche a sent le caramel et la banane, je me demande si cest pas une copie de la Chimay Bleue avec moins de grains...

Couleur ambre sombre, lgre mousse beige. Nez levures belges ,fruit, caramel doux. Gout fruit caramel, avec fortes levures un peu astrigente. Bon corps assez rond en bouche. . Fin caramel doux, un peu fruit et levures.

November 5, 2014. Bottle at home. Hazy amber with a large creamy off-white head. Aroma si candi sugar, caramel, some dried fruits and spices. Taste is medium sweet caramel and sugary, light bitter with spicy and earthy notes. Medium bodied, quite fizzy carbonation.

I had it from Del Haize (super market) Brussels. Classic Belgian Ale taste. Trappist from France but without Trappist label :-) For me similar to Chimays!

Amberkleurig bier met snel zakkende schuimkraag. Kruidige neus met fruittoets. Moutig in de mond, peper in de afdronk.

A gusher. Massive carbonation creates a huge ivory aerated head on top of a cloudy amber beer. Not a huge amount in the nose, but a little sweetness and maltiness. The taste has some more to it - honey, dried fruits, malts, toast, a little booze. Good balance between sweet, bitter and dry. Medium bodied with a pepperiness on the tongue. Not bad but not a standout trappist.

Aroma: Light spicy, peppery, Light fruity, banana, citrus. Light malt, grainy, bready, toasty, Appearance: Body: Hazy amber. Head: Massive, rocky, off-white. Good retention. Flavour: Medium malty, bready, toasty. light fruity, banana. Light alcohol, peppery. Medium-light bitterness. Medium dry finish. Mouthfeel: Full bodied with high, creamy carbonation.Light warming. Overall: A really great example. Easy drinking, but the warming s an indication that this is not something you want to quaff! Great beer! 330 ml bottle, poured. Thanks Andre! 18B. Belgian Dubbel

Nose is muted, nut, Belgian yeast, bread, slight fruitiness from the yeast, slight sugar. Taste is sweet, candy sugar, leading to yeast, plums, bubble gum, banana, caramel, licorice, and herbs in the finish. Mouthfeel is fine. Its too sweet, but still its better than expected even if the nose is dull.
