COMMERCIAL DESCRIPTION
Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesn’t get much closer – they have their beer brewed by the monks of Chimay!
Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.
A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Poured from a 330 ml bottle into a tulip glass at the World of Beer in Pooler, GA. The appearance is a cloudy amber brown color with a medium sized white head.dull gold colored cap.

Bière trappiste ambrée, très mousseuse à l’ouverture, reste une mousse normale après mise en verre, un arôme très métallique, elle reste assez pétillante mais donne ce goût métallique eu à l’ouverture. Un palais qui semble un peu ressemblant à la touche "chimay", le fait de la produire à scourmont ne doit pas être un hasard. Bon pour une trappiste française on est pas dans le haut du tableau mais bon...

Barwa herbaciana, Gęsta obfita i drobna piana. Oblepia szkło i dosyć długo się utrzymuje. Piwo poprawne, ale nie szczególne. Aromat nie jest zbyt intensywny, smak typowy dla gatunku - niczym się nie wyróżniający.

Bottled, 0.33 l. Hazy amber colour, medium sized creamy off-white head with average duration. Nose of malts, cheese... Aroma has mild caramel, bread, cheese and hints of sugar, mouthfeel is slick, somewhat creamy. Gently warming, mild citrus fruity, earthy finish. Nice one.

A steady pour produces a three-finger thick, lightly amber tinged, pale tan colored head. The beer is a lightly concentrated amber color that shows a lightly hazed, amber hue when held up to the light. The aroma smells of oxidized malt, cider, caramelized nutty notes, and fruity raisin and prune notes, as well as a touch of tin-like notes. Clove aromatics boost a perceived sweetness here.

The beer is well carbonated, a touch fizzy at first, and has a medium-light body that is not heavy, but has a touch of viscosity to it. Flavors of cider, a touch of hop bitterness in the finish, a lingering phenolic spice that leans towards clove, toasted grain notes with a caramelized edge, lingering toasted nutty flavors, a certain metallic edge to the caramelized malt, a bit of grape / raisin, as well as a date like flavor.

It is unfortunate this has no bottle date, as I have no idea how old this is; it does seem to have taken on some age & oxidation character, and at this point it doesn’t detract, but I get the sense it is at least different than a fresh sample, but am not sure if it is better or worse. For me this is pretty tasty as is.

Cerveza de color Ámbar oscuro con una cabeza de color beige, cremosa de alta persistencia. Aroma dulce con notas de caramelo, toffee y presencia de frutas, frutos secos y especias. Sabor afrutado y dulce, notas tostadas con un final suave y un amargor seco. Cerveza muy agradable.

Shared 33cl bottle. Hazy amber with an eggshell-colored head. Aroma of malt, bread, a little sweet. Taste is malt, bread, yeast, spice, caramel, fruit. A very nice beer.
