Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesnt get much closer they have their beer brewed by the monks of Chimay!
Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.
A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Aroma: spicy and yeasty, but not as good as other belgians; almost getting a ham or salami undertone; Appearance: clear amber pour with medium white head that dissipates very slowly; Taste: better than aroma; a little more bitter than usual belgian but still nicely balanced; Palate: heavy body with long, sweet finish; Overall: may not be the first belgian I reach for, but still quite good. Would drink again.

Bottle from The Beerhive. Hazy amber body with a thin off-white head. Faint lacing. Aroma of bread, yeast and toffee. Flavour of apples and stewed pear. Thin to medium body with a frothy, fizzy mouthfeel. Milder than I was expecting, based on the ABV and previous ratings.

An okay ale. The Chimay monks made sure that it dies not surpass their brews.

Bottle at home in London - sourced from Beermerchants. Aged about two to three years. Pours lightly hazy orange-gold with a frothy, off-white head. Rich Belgian yeast in the nose, candi sugar, fruitcake, brown bread, light banana. Medium sweet flavour with more sugary bread, some toffee, faint earthy bitterness, licks of alcohol, more yeast, toasted sugars, light brown sugar, faint berries. Medium to full bodied with fine to average carbonation. Lightly chewy, too. Nicely balanced on the finish, with more fruitcake, caramel and toffee, hearty bread, ripe fruits, aged banana, yeast, toasty sugars, faint alcohol, earth, peach, toasted grains. Really good stuff overall. Smooth and nicely layered. Just what you would want out of a Belgian strong.
