COMMERCIAL DESCRIPTION
Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesnt get much closer they have their beer brewed by the monks of Chimay!
Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.
A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Exceptionally high carbonation with large bubbles rising up to feed a poofy off-white head atop a hazy orange-tinged amber body. The nose is an uneasy mix of melanoidin maltyness and skunked hops with some rawhide thrown in. Similarly, the body is of skunky hops, melanoidin maltyness and rawhide notes. Medium-bodied with fizzy mouthfeel. Aged malt quality with a stale, crusty bread finish.

Drank at Brams 20-11 before the tasting. Okay triple-like taste, but a bit watery throughout with a thin body.

Brown colour with a thin head. Sweet toasted malts, typical tapist yeast. Taste is not so intese as I spected. Worse than the classic trapist beer. Not happy with it.

Bottle at Matts
Hazy amber color with large head. The aroma first comes with Belgian yeast, then it shows some puke and vegetables, and honey; weird. Smooth mouthfeel; nice flavor of Belgian beer with honey accent; low bitterness.
Not too exciting, but at least it has a true Belgian character.

330mL bottle, pours a cloudy dark orange amber with a small white head. Aroma brings out bubblegum, dark fruits and Belgian yeast. Flavour brings out complex Belgian yeast, a little bubblegum, and dark fruits. Quite complex in the yeast department. Much better than the average ratings suggest. Very nice.

Bottle - Light yellow raisin and butterscotch notes. Cloudy gold with a decent white head. Nice caramel notes and some orange and light spice. Nice.

33cl bottle at home. pours a hazy amber orange colour with a nice frothy off-white head. aroma of fruit and candied sugar. Taste is malty, yeast, caramel, brown sugar, licorice, orange with a hoppy bitter finish. texture is creamy with average carbonation.

Hazy amber orange color with nice lasting fluffy head. Aroma is fruity, candy sugar. Flavor is malt, sugar, dark fruits. Not too sweet, really tasty stuff!

Clear bronze (EBC 12) colour with a fluffy off white head. Aromas of alcohol aromatic herbal, toasted white bread notes with hints of raisins develop.Lightly effervescent, slick and pronounced body. Ready alcohol aromatic sweetness up front with a light spicy touch. Lasting sweet finish. Pleasant.
