COMMERCIAL DESCRIPTION
Mont Des Cats is a trappist abbey in Northern France, a few kilometres from the Belgian border. They do not have a brewery in their monastery, so their beer cannot show the Authentic Trappist Product logo. But it doesnt get much closer they have their beer brewed by the monks of Chimay!
Developed independently to the Chimay range, the beer is a lovely copper colour. The link to Chimay is evident in the distinctive Chimay yeast character, in both the aroma and taste.
A pleasant caramel malt sweetness introduces the beer, being joined by hints of dried fruits, gentle spices and an earthy, herbal hop character. As the beer progresses, the bitterness seems to build toward a nice lingering finish.
The abbey only makes one beer, with no intention for more. The abbey is recognised as a Trappist Monastery, allowing them to use the term on the labeling. But as the beer is not brewed on their own premises, the beer is not a Trappist ale.

Ambrata carica tendente al rosso, opalescente, schiuma bianca di media persistenza. Aroma di malti tostati, zucchero di canna, uvetta, erbaceo e speziato. Corpo medio-pieno, mediamente carbonata, equilibrata tra note dolci ed amare (le stesse presenti nell'aroma), alla fine prevale l'amaro di misura. Retrolfatto speziato ed erbaceo. Tutto sommato non è male.

Bottle. Opaque dark orange body, medium head. Aroma has some Belgian yeast but it has a hint of sweet toffee and vanilla in it. This aroma is very similar to Chimays own beers so it must be using the local Chimay yeast. The taste is not as assertive as on the classic Chimays: sweet yeasty malt, some mild fruity aspects here and there. Finish is more yeasty than hoppy. Decent Belgian ale with a nice aroma but the taste is quite typical.

Aroma of raisons and brown sugar. Dark orange with a light blanket head. Sweet taste of candied cherries and salted caramels. Think and pulpy body. A nice mix of strong blond versus strong brown elements.

0,33 l bottle from P&M Getrnke, 2013 vintage. Clear, reddish amber with a medium large, frothy, slowly diminishing, tan to white head and some little flocs. Fruity-spicy aroma of citrus, raisins, plums, cherries, cane sugar and caramel. Sweetish taste of cane sugar, caramel and yeast, followed by a slightly metallic and gently bitter finish with a warming, alcoholic note. Medium body, creamy albeit minimally watery mouthfeel, lively carbonation. Probably the worst trappist Ive had up unil now. Lacks aroma and taste and doesnt satisfy. Not bad, but just far below my expectations.

Color amber orange and high turbidity. Your Cream is beige clear, large, reasonably persistence. Mark the sides of the cup with a cream lace. The aroma is sweet, with citrus notes of fruit coming Belgian yeast and mix with malts, cookies, cherries, plums, peaches and yeast perfumes. The flavor has a strong presence of malts, which merge and complete a velvety and soft profile with notes of cherries, peaches, some sweet spices, nuts. Incidentally, this sweet has a clear tendency to balance the employee hops, but thanks to high carbonation makes very dry and very drinkable beverage in a clear favoring by alcoholic strength is not as high. Makes quite rich and smooth taste. It has high and medium carbonation body. Net silky with perfectly inserted alcohol, gently creamy finish. The aftertaste is clean and dry. In conclusion, I would say it is a younger sister of a Chimay, with a less intense body and more carbonation. It reminded me a Chimay Rouge, and my guess is probably the French must have used some of the Belgian yeast house, but is not as complex and complete as Chimay concerned. And has no end so pleasant in the mouth as one Chimay Rouge. No doubt ma good Trappist!

Pours hazy honey-amber with a thick and rather persistent cream-buff head. Malty aroma has a sweet and somewhat tart fruity overtone, pear plus a little apple. Flavor starts with a malty core and then adds apple, pear, yeast, and hints of honey and hops; sweetness nicely balances subtle bitterness and sourness. Texture is fairly firm and smooth, and rather fizzy. The cats meow.

Medium white dens head... amber/brown opage colour... smell malts and yeast some herbs some fruits/grapes.. taste yeasty good carbo some herbs. Not a bad add to the trappists.

Some florals and a little booze in this. Pours cloudy maroon without much head or lacing. Light sweet finish. Not up to the standards of most of the other Trappists.
