Our Double Chocolate Cranberry stout (Winter Beard) is a rich and sturdy brew with roasted dark chocolate malts, rfeal cocoa, 70% dark chocolate, and locally harvested cranberries.
We decided to age a very small amount of our 2011 Winter Beard in Tennessee Whiskey barrels for just over a year.
This is the result. We hope you enjoy it as much as we do.

---341ml. Bottle from Brewery drank on Nov 3, 2013. Pours black as oil with no head and only a slight ring of off-white around the edge of the glass.
Aroma is large. Big booze and vanilla notes from the barreling. Chocolate, a sweet/fruity/tartness from the cranberries, and a hint of roasted malts as well. Very nice.
Taste is a solid bitter, a hint of tartness, and a roasty, chocolate, coffee aftertaste. Mild alcohol warmth and vanilla flavour mixed in as well.
Medium-full body with a low-medium carbonation. Oily/slick in the mouth but with a slightly creamy feel providing a good drinkability. Goes down smooth but definitely a sipper. Not as sweet as others I have tried recently.
Overall really good. A fantastic aroma mixed with a solid, big bitter, flavour. Well worth the drive to Muskoka. Just make sure to grab a few. You won’t be sorry! Cheers!
February 4, 2014 - 341ml bottle, at Corks. Opaque ruby-black with a small creamy brown mottled head, legs too. Aroma is tangerine, bourbon and alcohol with some vague chocolate. Taste really really works - yes, bourbon (boo!) but so much citrus - like essential oil of citrus for aromatherapy - and plenty of rich chocolate - nice. Airy and somewhat light body, finishes quite quick, no heavy aftertaste and never becomes boozy. I quite liked it - not as big as the Winter Beard, somehow. Bottle from the brewery. Obtained in November 2013, opened in February 2016. Deep almost-black with minimal carbonation and a wisp of tan head. Aroma of burnt wood, dark chocolate & malt, tart cranberry, some booze warmth but not as much I seem to recall getting from the fresher bottle I tried when it was first released. Flavour follows the aroma, with malt and chocolate backbone, and more cranberry & less alcohol than expected. Finish shows some oxidization, but it’s still in decent shape otherwise. Bottle from the brewery. Pitch black with only a hint of khaki head around the edge. Bourbon is prominent in the nose with vanilla, wood, dark chocolate and just a hint of the cranberry. Flavour is light sweet malt with bitter coffee and chocolate and some light tartness from the cranberry. Alcohol not quite hidden. Medium creamy mouth with very soft carbonation. Lots going on here.

Small bottle split 3 ways. Black pour. Lower carbonation and a small head. Big whiskey and roasted malt aroma. Corn up front, but this disappears as it warms and gives way to a nice balance of whisky, roasted malk, wood, and vanilla. Cranberry almost nil,though. Rich full body. Pair with a cigar. 17.02.2015. 0,355l Bottle at Corks Beer & Wine bar, Toronto. Tha name tags says it has an abv of 9%. Thanks for coming up with this one!! Very rich. Sweet vanilla bourbon aromas. Strong with good body. Flavours of dark malts. There is not so much flavours of hops, and its not very bitter. Dark malts, cold coffee, vanilla and Jack Daniels dominate.
