COMMERCIAL DESCRIPTION
4 months bottle refermented with 100% Brussels Brettanomyces yeast. Amber colored with copper reflections, very fruity (pineapple and red fruits), sustained by hop flavors and complex notes of old leather. In spite of its 6,5%, its dry and bitter finish makes it a surprising thirst-quencher.

UPDATED: MAY 27, 2017 May 2016 bottling reviewed one year old, pours hazed amber with a tall and sticky head, just barely crawling up out of the bottle when the cap is removed. Funky, buggy, nearly acetic apple-like (malic) brett impression, covering dense orange and apricot fruitiness. It’s medium-light bodied, lightly sweet with some low acidity, more tart and musty across the middle turning slightly sour in a wet finish. It seems to have survived out one year, no surprise given what it is, but still too much of this green apple and white vinegar resemblance, which thankfully subsides as it warms in the glass, the aroma showing more cork and old books / leather. There’s still plenty of sugar left but the carbonation is a mess, over-effervescing right out of the bottle (which comes across as disjointed / loose), before settling out in the glass after a couple of minutes, where its richness and sweetness overtake the diminished CO2 making it feel weighty. Fresh pours have more pizzazz and brighter carbonic acid.

Bottled. A hazy amber beer with a lazing yellowish head. The aroma has notes of fruits, Belgian yeast, malt, and straw. The flavor is sweet with notes of fruit, malt, spices, and Belgian yeast, leading to a dry finish.

Bottled February 11, 2016. Gushed when poured. Ar: Leather, underripe peach skin; some acetic acid; hay and dried grass. Ap: Copper-orange and cloudy; very large, airy off-white head, billowing and specked with yeast bits; spectacular retention. T: Hay, cantaloupe, and bitter orange peel; low sweetness; slightly tannic, with a hint of vinegar; oily orange, a little nail-polish remover; earthy, soil-like hop flavor, with a medium bitterness; finish is more hay and orange and a bit of oily lemon. P: Medium-light body with very high carbonation; finish is very dry. O: Beautiful aroma and pronounced brett character in the nose and palate; the oil and nail-polish remover is a bit off the mark, but with other, more-prominent flavors the beer remains tasty and complex.

Bottle, courtesy of SinH4. Pours cloudy amber with a big stable white head. Aroma is brett, stables, pig, sour candy. Body is decently funky and strongly bitter, with a strong but velvety carbonation. Generally dominated by these 3 impressions, flavours are rare. Dry palate, with a lingering bitterness. A thirst quencher indeed.

From a 33 cl bottle. Pours a clear gold with a massive off white head. Dusty aroma with flavors of dried cherries and white grape skins. Highly carbonated, with a crisp, dry finish. Nice.

UPDATED: FEB 23, 2018 Bottle at restaurant. Amber color, white head. Bitter taste with citrus, hops, spices, brett, grass, toast and earthy notes. Bitter finish with citrus, hops, brett, toast, earthy notes, grass and a bit of wood. Excellent Belgian ale.

33cl bottle from the brewery, pours a clear orange with some frothy, white head. Nose is dusty, straw, sawdust, dried herbs, potpourri. Flavor follows, some candy, a little sweet bread dough, dried grasses, dried herb, orange, straw. Lots of dry, brett character throughout. Finishes dry.
