Cascara Quad is a dark, strong and surprisingly delicate ale made with dates and coffee cherries. Channeling the Trappist tradition, it’s brewed with an ethereal malt bill, and spiced with the fruit of the coffee bean (cascara). The aroma brings dates, cherries and pipe tobacco right to the nose and builds layers with hints of spice and fruity Belgian yeast. Once on the palate, Cascara Quad starts swinging clove, fig and molasses. Each sip offers sweet warmth, deep complexity and fleeting dryness.

Hops: Hallertauer Hersbrucker-Nobel, Styrian-Golding-Nobel
Malts: Pale, Munich, Caramel Munich, Biscuit, Black
Fruits/Spice: Belgium Amber Candy Sugar, Date Sugar, Cascara Tea
Body: Medium-Heavy
Aroma: Ripe figs, raisins, plums, black cherries, toffee, chocolate, pipe tobacco, rich Corinthian leather and leather bound books.
Mouthfeel: Starts big and smooth, finishes still smooth yet the cascara tea and higher ABV will bring a nice dry warm end to this epic novel.
Flavor: Sweet and rich, huge complex overall taste.
Visual: Brooding, dark, cloudy berry brown with tan head.

UPDATED: SEP 8, 2013 Draft - Dark fruit, brown sugar and booze. Cloudy amber with a rich white but thin head. Brown sugar, raisin and lots of booze. Nice but a bit boozy in the finish.

A unique, but not super tasty ale. Pours a very nice thick orange-amber with a thick grey head. Smells of coffee and molasses. Lots of slightly sour green apples in the front, with a finish of coffee and molasses. Good, but a little sour for our taste, with a strange aftertaste. Comes out of the tap a deep chocolaty brown with a thin but fine-bubbled buff head that leaves generous lacing. Aroma tempts with malt, chocolate and toffee notes. Flavor is better - caramel, sharp fruity - yes, cherry plus date - toffee, malt and semi-sweet chocolate tones that dance across the tongue, and, WHOA, an alcohol nip like a lap dog with an attitude! Texture has only average thickness, but good fizz and, yes, that alcohol bite. Add some faith to your lips - hell, add it to your tongue!

Pours clear copper color with light tan head. Aromas of dark fruits, toffee and Belgian yeast. Raisin and plum flavors with candi sugar, yeast and alcohol. Medium to full body with moderate carbonation. Meh.

Bottle. Orange brune pour with white head. Some quad, fruit and roastier aromas. Flavor is quite a mess I guess I can see some quad, fruit and coffee but there is too much if a boozy presence and its a mess.

Draft at the brewery. Pours a mostly clear amber with a small off-white head. Big caramel and dried fruit (dates, figs, raisins) notes, with cherry juice, candi sugar, and boozy bread. Medium-bodied, with a smooth, coating mouthfeel and moderate carbonation. Good American quad.

How many bad experiences will it take before I clue in and stop trying NB lips of faith series? Eric’s ale was so good that I just don’t learn no matter how many bad examples I suffer through. Deep amber pour, slightly funky, NB house character with metallic (copper) finish. Maraschino cherries come through late. Unimpressive.

Bottle. Hazy amber/purple pour with a tan head. Aroma is dark fruit, toffee, alcohol. Flavor is sweet, a little hot. Dark fruits and raisins. Belgian yeast character. Fairly one note for all that. Just ok.

Poured at New Bohemia in Mpls. An attempt at a Belgian quadrupel but I would stop short of calling it a successful one. Tastes of plum, sweet, and alcohol but balance seems to be off. Like a drunk gymnast on the beam. Bitter aftertaste. Not recommended.
