Pours a dark ruby red. The nose an taste sweet, fruity and honey. I really liked the way the raspberry played off the honey. Very nicely balanced and approachable. (Batch 11-1; bottle) This starts with an aroma of raspberry and honey, and pours an opaque red, that turns ruby when held up to a light. There’s no carbonation left in this bottle. On tap at the tasting room, Indy. Looks and pours like a minimally carbonated, particularly rich rosé. Nose was nice and soft, demi-sec with not overwhelming fruit sweetness. The relatively understated honey allows more of the berry to come through, which is all to the good in terms of the mead’s character. This is the one we picked up a bottle of. Really deep ruby to violet color. Lots of complex aromatics and flavors. Let it warm up a little to get all the notes out of it. Fuller bodied, rich, very nice. Recommended.

Bottle: The aroma consists of heavy raspberry and light alcohol. It pours somewhat transparent orangish-red with no head...just an occasional bubble. The flavor starts with lots of sweet raspberry. The finish has some moderate red wine flavors. It’s medium bodied with no carbonation. Overall...tastes like a raspberry wine.
Sampled from the bottle at the source... Pours a deeper pinkish red hue, mostly transparent, a thin film of legs, still of course with no head... Dark berry, subtle applewood smokiness, and then the fruit re-invents itself again late with the honey taking a backseat... UPDATED: DEC 4, 2011 Bottle from the tasting room. Appearance is clear and a brilliant pink. Kind of like a more vibrant rose. Somehow the raspberries and honey combine to provide a dark fruits/chocolate flavor. Very easy drinking for the high alcohol content. Much more body than the red raspberry with a lot of complex flavors going on. Sweet with dark fruits and a very smooth body. More of a dessert offering.
