COMMERCIAL DESCRIPTION
Brewed in the tradition of the Lambics of Belgium but using a blend of Ale Yeast, Brettanomyces, Lactobacillus, Pediococcus, and Acetobacter. These microorganisms came from our culture collection as well as many collected by Dan around the wilds of Wisconsin! Fermented and aged in Oak. This beer spent the summer of 2009 aging outdoors in used oak barrels. Then bottle fermented. This is a funky and very sour beer not for the faint of heart. If you are unfamiliar with sour or Brettanomyces beers you may want to pass this one up!

Huge thanks to adneilsen for sharing this - hazy gold - short-lived head - lovely nose of oak, vanilla, apricot, pineapple, apple, light muskiness - moderately acidic, with a decent mix of acetic and lactic character - a bit of vanilla and oak - finish of apricot and moderate ace to notes - good, but falls short of what the aroma promises.

Bottle @ Brandon’s house, courtesy of Adam. Huge thanks! A touch hazy, golden orange appearance with an off white head that’s fizzy and dissipates pretty quickly. Big oaky, tart lemon, lightly tangy pineapple, mildly sour aroma. Big, tart, pineapple, moderate lemon, cheesy, funky, sour, oaky flavor with a tart lemon, mango finish. Big carbonation. Cool beer.

Pour big thanks to Aaron for this one! Pour is hazy orange with thin fading white head, aroma has notes of big funky lemon, hints of funky basement, cheese notes, with a touch of lactic tartness in there as well. Really nice smelling. Taste is a nice mix of fizzy lemon and lactic notes, slight funk and biscuit bread, touch of funk, finishing fairly dry and slightly tart. Not quite as good tasting as the aroma, but a fairly nice brew!

Pours a golden yellow with a frothy white head. Aroma is sour with some mild spice. Wow. Definitely a super, funky, sour beer. This might be the most sour beer I’ve had. Oak, barrel, char, interesting characters. Nice beer that just gets better as it warms.

Clear medium yellow colour with a average to large, frothy to creamy, good lacing, mostly lasting, white head. Aroma is moderate malty, toasted, tart, wood, oak, baking yeast, horse blanket. Flavour is moderate to heavy sweet and light acidic with a long duration, tart, wood - oak, fruity. Body is medium, texture is oily, carbonation is soft. [20111031]

Pours light orange golden with a decent off white head. The aroma is very sour with light sweet candy notes, pleasant. The flavor is super sour, in a good way, especially with all those yeast varieties. However, it ends a bit dry, making it smooth and not puckering tart.

Skyview V, 11/11/11. Thanks to BDR for picking these up for me when they were for sale! Clear gold color with no head. Tart apple aroma. Plenty fruity, maybe plum? Very wheaty flavor. Light tart apple. A bit of bourbon? Light vanilla.

Thanks to Skyview! Light orangish pour Aroma is oak and apple/plum, yeasty. Flavour is full on tart sour, melon like fruit presence, medium somewhat smooth maltiness backing that. Nice brett funk works very well.
