From notes. Enjoyed at a tasting at Corbet’s house on November 06. 500 mL bottle. The pour is a very pale, straw yellow color with a little haziness and a thick white cap of head that falls off quickly, leaving a couple spots of lace. The aroma is pretty good. There is a dry cider thing going on. The champagne yeast definitely dries this one out a lot. There is a decent funkiness and a light grassiness toward the back end. The flavor is a little tart up front, but the cider tendencies definitely follow. The champagne yeast dries this baby out something fierce. There is a little fruit skin and a light funk on the back end. It’s not too shabby. The mouth feel is light bodied with a bright champagne carbonation (almost too much) and a lingeringly dry funkiness and yeastiness. Pours a hazy straw yellow from the bottle with bubbly white head that dissipates to leave moderate lace. Aroma of huge musty funk notes iso-valeric acid, lactic acid, and light fruit. Taste is white wine must, apple, a hint of funk and sweet malt, and a mild lactic acidity on tne end. Wow, this is awesome. Extremely pale yellow body, mild haze with nary a head. Aromas of gueuze funk, oak, apple, mineral water. Similar flavor. Thin body with a gentle acetic character. Tasty.

500 ml bottle via trade. Pours a barely cloudy champagne gold with a small white head that settles into a thin ring. Clean, sharp, tart apples, sawdust - almost suggesting a bit of Drie funk - grapes, herbs, grass, and dry grains. Light-bodied, with moderate carbonation and a clean, dry, tart mouthfeel. Like the Champ du Blanc I opened this with, it’s lovely and pleasant. 500ml much thanks to Clownoisseur!! Shared at Dan’s. Poured a hazy pale yellow color with a small fizzy white head. Aroma and taste basically mimic each other. Bottle thanks to Dave and Wrye. Pours a champagne yellow with big white foam. (Aggressive pour.) Aroma is funky wine. Taste is very much wine forward with the apple coming in half way and really balancing out the whole beer. Not too fruit forward but really well done in terms of an apple champagne.
