12 oz bottle: pours a clear deep amber golden with a clingy-lacing froth of off-white head. Has a sweet cinnamon and allspice nose with some toasty caramel malts and noble hops. Body starts with good fullness and effervescent carbonation revealing a clean biscuity malty sweetness and good cinnamon spice balance with a touch of light fruity complexity in the finish. Bottle: Clear, beaming copper with a mild red tint all around it; foamy, semi-chunky white head settles slowly on top. Moderate lacing along the glass. Aroma is dominated with holiday spice. Notes of gingerbread cookie, allspice, cinnamon, clove, & sweet toffee. Underneath the spice, there are small hints of plums, dark fruit, baked bread, & mild notes of Belgian-y yeast... This might just be due to the clove, though. Taste is quite spicy. Lots of sharp ginger & allspice with cinnamon taking a small backseat. Toffee, earthy notes, burnt toast, plum esters, & thick yeast swarm around, leading into a slightly bitter finish with lingering kitchen spices on the palate. Taste: Ginger snaps, earthy hops, toast.
Mouthfeel: Medium bodied. Average carbonation.
Overall: This is obviously not an everyday drinking beer, but perfectly executed and delicious. I would have fun braising meat or baking sweets with this beer.
