Pours amber with a white head. Smells of citrus, dry malt, some residual sugar, boozy. Tastes sweet and dry with a nice spicy element and some great dry malty hints on the finish.

Has a bit of a zesty orange marmalade nose, some other light fruits and a hint of alcohol in the there as well. Has a slight canned peach flavor, some white pepper, and a hint of minerality coming through in the finish. Nicely done, and different.

Review from 2005. Pours a nice golden hue with attractive lacing. Had a trace of alcohol present in the aroma mixed with fruits. Taste is sweet and fruity, very enjoyable. To me this was very drinkable. I purchased this at the brewery as part of a sampler 4 pack. I really regret that I only bought one bottle, as when I returned it was all gone. I really would have enjoyed having more of this to cellar and see how it does with age. If you can find a bottle I recommend it.

12 fl oz bottle. Pours golden clear yellow with almost no head. Herbal and slight mouldy aroma. Flavour holds a sweet malty and slight roasted flavour. Has bourbon like notes, earthy into the finish. Very little to do with a triple, strange yet okay.

Bottle. Small fizzy white head that mostly diminished. Clear flat looking body with a light amber / brownish color. Dusty grain, rye bread, earth, caramel, vinous, raisins. Medium to full bodied with a flat carbonation with a hint of alcoholic texture. Moderated sweet flavor with light bitter notes and maybe a hint of acidic. Sweet fruity like finish with a hint of spice.

This is a bit cloying. It has the nice layers of fruit and sweetness but the finish, seems to be too sweet in my mind. Pretty cool stuff but not my style.

12 oz bottle

(Rating #450) This came by way of a long process of negotiation and a little luck. Im glad to have tried it though it seems to be fading fast. If you happen to have any bottles I would open them immediately. Without having this fresh I cant say how far it has fallen but only that it was lacking. This was still pretty good. I cant wait to crack open a bottle of the Belgian Quad to see what a few years experience has done for the Careys.

Aroma / Appearance - The nose was very light for a tripel but still packed some punch. Vinous notes were accented by chocolate, apple sauce, pears and a bit of maltiness. The sum of the parts reminded me of a stale barleywine. The body was a little oxided but some carbonation still played across the surface of the caramel brown body.

Flavor / Palate - Apple sauce and sherry create a sweet opening profile. A trace amount of semisweet medium grade chocolate hides in the background. There is not much carbonation and overall the mouthfeel is a little cloying. It tastes too much like a malted apple juice to be very complex but it seems to have aged somewhat gracefully. Still, if you have any left now is the time to drink it. In another six months you might not have anything good left at all.
