Pours two and half fingers of head on a clear copper colored body.
The aroma is pine at first, then lots of tropical fruit: mango and pineapple. Really nice.
The taste is moderate pine and grapefruit bitterness, with a big malt bill to balance it out nicely.
The texture is crisp with soft and fizzy edges.

Dawn of the Red sports a copper-amber color and slightly sturdier malt base than some other Northwestern IPA's, but this brew is as thoroughly hoppy as most other things on the West Coast. It's a rather lovely brew with a clear body and an off-white head. There's a hint of caramel on the nose and palate, but otherwise this red ale is characterized by piney, earthy, and citrusy hops. Bittersweet taste and a crisp finish.

@St. Augs. Amber, bright, medium head. Just a great coating down the glass. Earthy, has some crystal malts right up front on the nose. Earthy, quite fruity with a lot of pear and peach. Ninkasi Dawn of the Red has a medium, soapy, off-white head, a mostly clear, orange-red appearance, and minimal lacing. The aroma is of red Jolly Rancher, tea-like qualities, bready malt, brown bread crust, and hop bitterness. Mouthfeel is medium, and Ninkasi Dawn of the Red finishes medium dry. Caramel, citrus, spruce aromas. red with particles floating in suspension. A bit of a turn off. medium sweetness, very bitter. Taste grapefruit, pineapple, pine and slightly spicy. Mouthfeel is light to medium bodied, average carbonation, bitter finish. It’s good.
