COMMERCIAL DESCRIPTION
We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

Bottle from Vika enjoyed at home
Dark copper, thin laced beige head, wonderful laces. Smells of malts, yeast esters, some phenols, fantastic fruity aromas. Medium sweet, super fruity, some caramel, fantastic yeast flavors. Oily texture, medium bodied, flat carbonation. Moderate bitter finish. This beer is awsome. The sake yeast really makes this something special. Fantastic and fruity. Glad they only malde it a 13.5 abv; much more drinkable than the strong sibling RH1, and better too

Bottle thanks to Dallas. Cool tin can. Pours a cloudy reddish color with a medium white head. A big fruity nose with pronounced sake notes. A sweet flavor with grapes, cognac, smoke, earthy, caramel. Very good. Unique.

On tap @ Setka Pub, Poznań. Pours hazy dark copper brown with small off-white head. Complex aroma of fruit, malt, caramel and hops. Sweetish, fruity flavour, with malty and caramellish notes, and bittersweet presence of alcohol. Lingering aftertaste of oaken barrels and fruit. Good.

Flaske 0,25l fra Vinmonopolet, Bestillingsutvalget. Mørk rødbrun. Veldig uklar. Lavt tett skum. God sursøt aroma. Litt frukt. Oljeaktig munnfølelse. Vanvittig fylde. Smaken er mandler, svisker & plommer. Varer og varer. Avslutter litt tørt.

DAA; Bottle 0, 25L. Batch #741. Brewed 12.20.2011. Opened celebrating New Year’s Eve comming up, and my 900 rating. Excellent packaging, as shown on picture, with bottle wrapped in red tissue paper. Pours small, hazy bronze with a short lived off-white head. Aroma is intense, malt, caramel, overripe fruit, plums, sugar, wood and yeast with noticeable alkohol. Taste follows nose, heavy sweet with a citric and spice touch, warming and sweet plums lasting. Body is full, texture is sticky, carbonation is flat. I like my sweets. Happy New Year!

TET (2929) - Kaarina, FINLAND - MAR 29, 2015
Batch # 741, bottle # 10942, brewed at December 2011, bbe at December 2016, over 3 years old but still years to expiry date. Slightly red, dark brown beer, almost without head. Aroma is rich, strongly fruity with notes of dried and fresh fruits, plums, honeydew, some red and sweet berries, raisins, strong sweetness but not too much. Taste has concentrated fruits and berries, honeydew, herbal bitterness is drying the taste. Strong sweetness but that’s in the fruity form, thus it’s not too much. Alcohol can’t be tasted but it’s there. Full bodied, slippery, only slightly sticky in the mouth. Unique, honeydew fruitness from sake yeast is also in this edition. Charming.

25cl bottle, brewed 11/2011, bb12/2016, odd-one-out contribution by bastarda @Outre-Rhin tasting 05/2015, danke. Soggy oddbrown pour. Aroma is an instant under-the-radar education to unsuspecting nostrils: damp wild rice, umami-meaty, smoked trout and algae, contoured by a stonefruity sweetness of old date and fig jam. More umami yeast textures in taste: grilled shiitake mushrooms, both rice-powered sake and vinous plum wine blending in, creating a meaty mouthfeel like charcuterie, woodcured ham/Schwarzwaldschinken and wheat-derived fig puree. Manages to remain dry and smooth despite all that. Quite a composition.
