We brewed this ale with the famous sake yeast No 7 from Masumi Sake in Nagano, Japan. On advise from Masumi’s master brewers, we fermented this ale very slowly at low temperatures to bring out No 7’s fabulously fruity character. This product is unfiltered and unpasteurized. Please enjoy chilled! Special thanks to Masumi!

Bottle shared with Esp0r and simonsen at the Beer & Boardgames in the woods trip 2016. Dark red body with a small offwhite head. Aroma of dry fruit, alcohol, toffee, wood. Taste is vineous, herbal, apricot, booze. Spicy and herbal finish. Nice

At cellar temperature (just to go against the grain!) and into a chalice. Cap released with nothing but silence and it settles still in the glass. Deep ruby copper body that shimmers in the lights. Weird albeit complex nose displaying deeply umami notes of soy sauce, kelp, tomato paste, char-grilled meat, sautéed enoki mushroom and oyster sauce with a prickling spice from that alcohol. A tight initial sweetness wakes up the palate; toffee and prune juice syrup up-front. Quite light in body but oily in feel with low viscosity in the swallow. Still as a glass of wine. The umami of the nose plays amazingly well here but it is matched by bitter charred tea leaves and bonfire ash which lingers long between each slow sip. Soy and oyster sauce and heavily reduced tomato paste come through strong but without the salty tang. A little earth, dust and wood builds late. The alcohol aides in giving it spice and a little warmth. A very unusual brew that edges a realm not seen in many ales. It is undoubtedly fuelled by the number 7 sake yeast giving it wonderful complexity and strange nuances. I liked it. A unique experience!!! (25cL, Batch #07819, brewed 20/12/11, BB 20/12/16)

Bottle at home. Kept for a while in storage. Pours a clear ruby red. no head. Aromas of chocolate, black cherries, cognac. King of Denmark candy. Sour, malted taste. Strong but tasty alcohol. Sake mouth feel. Excellent

Rating #2211 - 2015.12.02 - Beer School @7Degrees. Pours a bubbly ruby colour with a decent off white head that fades rapidly. Aroma is caramel toffee malt, dired fruit, raisin, prune. Lots of similar flavours on the palate, lots of floral notes, and a bit of a syrupy, boozy texture. Neat.

Komeassa boksissa on erilliseen punaiseen jouluiseen paperiin käärittynä pieni pullo, jonka sisältö ei juurikaan vaahtoa lasiin kaadettaessa. Väriltään olut on melko keskiruskea, aavistuksen punertava. Lähes kirkas. Tuoksu alkoholinen, luumuinen, maltaisen toffeinen ja hiivainen. Maku luumuinen, toffeisen makea ja hieman alkoholinen ja konjakkimainen ennen kaikkea jälkimaultaan. Melko täyteläinen suutuntuma, hiilihappoja vähänlaisesti.

Bottle, thanks Davido. Aroma has some cough medicine, definite herbal element, interesting. Was a bit hammered at this stage unfortunately.

(Nøgne Ø Red Horizon 2. edition) Bottle 250 ml from Cuso, thanks! Served into a snifter and tasted side to side with 3rd edition at home, ABV 13.5% Deep red to light brown colour on the body, a bit hazy, with a small bubbly tan head on top, low retention. Aroma of light dark fruits, cheese, alcohol. Taste is sweet with red and light dark fruits, ligt wine notes, dust, well hidden alcohol for the most part. Medium body, soft carbonation. Good, I expected more to be honest.
