Our Patrons Projects to date have explored working outside of the classic four brewing ingredients, introducing different coffee, fruits and other additions more common to the culinary world, and all have also been very much towards the higher end of the ABV scale. All have tested the team as brewers in their own ways, but in 'Striding Edge' you could say we had our biggest challenge to date. With no fruit additions on the table and without the firm canvas that higher ABV gives, we set about creating a 3.0% ABV session beer with a flavour, intensity and mouthfeel of a drink of much higher strength. Starting with the base, we made sure our water was super soft and well balanced. Enough Sulphates to lift the hops, enough Chloride to smooth out the mouthfeel. For the malt we trialed a new Super Pale variety, making this by far the palest beer we have ever brewed, and made up 1/4 of the grist with Oats for the creamy mouthfeel they contribute. Ensuring the mash temperature was as high as we could go while ensuring some enzyme activity, we filled the wort with complex sugars to ensure a higher finishing gravity and consequently a chunkier body. We then layered in as much hop flavour across 3 dry-hop additions, going with west coast favourites Simcoe, Amarillo and Mosaic for an intense Pine, Grassy and Citrus character, backed up hints of Orange and Mango from a bonus Citra addition.

Hazy pale golden color, white head with nice lacing. Aroma with a high presence of herbal notes, slightly citrus and some tropical hints. Flavor with a moderate bitterness, very fruity, very herbal. very nice. Bitterness in the final, fresh mouthfeel. Enjoyable.

evergreen0199 (3605) - Northwood, Greater London, ENGLAND - FEB 12, 2018
Keg at The Northern Monk Refectory, Leeds, Yorkshire. A hazy golden/yellow coloured pour with a medium white head on top. Hoppy, citrus, tropical fruit aroma. Tastes hoppy, citrus, tropical fruit, lemon. Decent SIPA for the ABV.

LazyPyro (1909) - Gloucestershire, ENGLAND - FEB 8, 2018
440ml can. Murky golden yellow with a frothy head. Aroma of sweet citrus fruits, pine, sherbet. Taste is sweet, fruity and sherbety, very low bitterness. Light-medium body, very good for 3%, smooth, average carbonation. Outstanding SIPA, glad this was rebrewed after missing it first time round.

theprof (1455) - Nottingham, Nottinghamshire, ENGLAND - JAN 31, 2018
Tap at the Junkyard. Pours hazy yellow gold with white lace top. Aroma lemon citrus and pine. Taste medium bitter dry crisp finish. Palate medium bodied, slick feel, soft carbonation, bitter, crisp finish. Very good for the abv.

Pint at source. Pours hazy milky straw colored, small white head. Aroma of lemonade, and the same goes for the taste, lemonade with a dash of exotic fruit juice.

hrabren (2044) - Zagreb, CROATIA - DEC 11, 2017
On tap at Craft Room, Opatovina, Zagreb. Summer of 2017. Murky yellow, off-white head. Moderately hoppy, citrus, hard candy and light herbs. Lightly bitter. Light body, moderate carbonation, just right, great refreshment, great balance, moderately to long lasting hoppy finish. A lovely refreshing drink!

deyholla (12660) - Minneapolis, Minnesota, USA - NOV 25, 2017
On tap at Cafe Beermoth. Pours a cloudy yellow orange with a white head that dissipates slowly to the edges. Aroma has lots if sweet citrus, straw and grains. Favor has bitter citrus and grass with grain and peanut shell backing.

Towey1989 (3510) - Stoke On Trent, Staffordshire, ENGLAND - NOV 16, 2017
Keg at Brewdog Manchester. A hazy golden colour with a thin white head. Aroma of melon, some mango, a hint of pine, slight straw and subtle herbal hops. Taste of melon, maybe lemon, some mango, slight straw and subtle herbal hops. Light bodied and moderate carbonation. A dry, citrusy and herbal hop bitterness in the finish. For a 3% session IPA this really packs a hoppy punch. Just a shame it’s so thin, small drawback though.
