Clear medium to dark brown amber colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, dark malt, wood, caramel, spicy - licorice - wood. Flavor is moderate to light heavy sweet and bitter with a long duration, licorice - wood, sweet malt, dark malt, hoppy, dry. Body is medium, texture is oily to watery, carbonation is soft to flat.

Pigs Ear Fest. Cask. Clear deep amber beer, good pale tan head. Palate is smooth and semi dry, decent fine carbonation. Tangy malts, not that sweet. Floral bitterness. Lemony citrus and mild orange. Light orange peel. Light bitterish finish. Tasty enough.
Cask at the Wellington, Birmingham. Poured a clear medium brown with a frothy off white head. The aroma is treacle toffee, sweet red berry fruits. The flavour is moderate to strong bitter with a dry smoky charcoal ashtray, hop bitter palate and a lingering bitter finish. Cask conditioned at The Post Office Vaults, Birmingham. Dark chestnut with cream head. There is a darkly roasted malty note from the off, liquorice and reasonably tarry. Some fruitiness comes through, jammy marmalade, pineapple hints, lasting bitterness. Decent without having the normal Oakham class. Extremely dark mahogany brown with a decent light tan cap.
Nose is biscuit, toffee, light hop bill, cocoa powder.
Taste comprises light coffee grinds, spice, chocolate, dark malts, light roast, liquorice.
Medium bodied, soft carbonation, drying close.

Gravity cask at the Drayman’s Son, Ely. Dark brown without being extremely so. Translucent with a small loose cream/tan head. Roast malt and plum scents combine with sprucey and slightly resinous notes. Extremities of the bitter malt and intense hop overthrow the balance in the finish a bit. Thin body. Cask at Pigs Ear 2016. It pours darkest brown with a thick light tan head. The aroma is toasted malt, toasty, cocoa, dark chocolate, earth and some charcoal. The taste is smooth, bitter, chewy roasted malt, chocolate, cocoa, berry, fruit compote, earth, light tar and soapy citrus with lingering toasty / charred finish. Medium body and fine carbonation. Cask at Pigs Ear 2016 - London. Pours clear brown with a creamy heading. The aroma holds citrus, berries, brown bread. Light-medium sweet with lightly toasted bread, melon, like, tangerine, slight pine and earth. Medium bodied with fine carbonation; good condition. A little resinous toasted pine in the ending, with rindy orange, light toast, hints of ash. Solid.
