COMMERCIAL DESCRIPTION
Triple IPA Collaboration with Meridian Pint’s restaurant group.

This beer has been in conversation for about 6 months. We decided to shoot for an early February release date, partially inspired by Russian River Pliny the Younger (one of our main inspirations for this offering).

Adrien and Mike at Ocelot spent considerable time and energy writing a tricky recipe. We wanted the beer to be big (around 10.8%) and with enormous hop flavor and aroma, but also maintain a sense of crispness and dryness so often lost in hoppy beers at this ABV.

The grist bill is primarily English Maris Otter with just a touch of Pilsner. We decided on Maris Otter as a base malt for a couple reasons. First, Maris Otter is a nice pale base malt with just enough subtle nutty and bready character to stand up to the hop assault that we planned to launch at it. Second, Maris Otter is able to ferment to very high levels of ABV. This was essential for us, as it eliminated the need for any darker malts.

Like most of the world’s highly praised Imperial/Triple IPAs, we also added some brewing sugar, to help ensure the finished beer was as dry as possible.

For hop selection, we went with three of our current favorites for the flavor and aroma additions: Simcoe, Citra, and Mosaic. And we used a lot of them. After a bittering addition of CTZ, we added a combined 22 pounds of Simcoe and Citra during the kettle and whirlpool. Dry-hopped with 76 pounds of Simcoe, Mosaic, and Citra (52 total pounds of Citra) spread out over two additions. In total, 104 pounds of hops for a 30 barrel batch of beer. Almost 3.5 pounds per barrel.

Draft. Crystal clear apple juice body with small white head. Aroma is moderately sweet, tangerine, light lemon. Taste is sweet, tangerine, some grapefruit, light alcohol warming. Resinous full body, light acidity.

Clear golden beer with no head or lacing. Fragrant and a big drink with lots of hops and prevalant alcohol. It has a nice finish and could be a sipping beer in this cold Washington DC winter.

Draft at Churchkey. Orange golden body, clear, nice silky, bubbly head. Hoppy aroma, some pine, some citrus. Taste explodes in your mouth, juicy bitterness. Creamy mouth feel. Long lasting finish, and a bit of heat. Nice!

32oz growler->tulip. Cloudy gold with small offwhite head. A: musky citrus and pine hops, caramel malt. T: very musky and resiny pine and floral hops, citrus peel, caramel malt, with a touch of soapiness. Very good (great but for the soap).

Draft at Churchkey. Poured a slightly hazy golden color. Light white head. Aroma was lots of tropical fruits, hop, citrus. Flavor was a blast of resin, tropical fruits. Hidden pretty well.

UPDATED: FEB 13, 2016 Draft. Aroma of sweet stone fruit. Flavors are even sweeter, like stone fruit with some honey. Also some pineapple. The alcohol is completely hidden. This is an extremely accomplished beer, but I also felt like it was a little bit muddled, as IPAs that check in around 11% tend to be. Tastes a bit like big beer rather than like a progression of flavors.

Draft at Meridian Pint. Slightly hay golden color, white head. Aroma has grapefruit, pineapple. Taste has bittersweet earthy citrus. Very tasty. One of the better balanced DIPAs I’ve had in a while.

UPDATED: FEB 4, 2016 4 oz pour on draft at Meridian Pint. Slightly hazy golden orange with off-white head. Aromas of big tropical fruit, floral notes, stone fruit, citrus. Tastes of big tropical fruit, floral, orange and grapefruit citrus, light malt. Medium body with a dry finish. Juicy mouthfeel. Well masked alcohol. Fantastic, really well done.
