The tartness on this seems to have grown quite a bit for just nine months (cellared at 55-65º); lemons and oak tannins now reign supreme over the red and green apple bite, coffee cake, and cherries with little else able to show through; this bottle has also become a slow gusher despite being refrigerated for several days before opening, popping the bottle stopper multiple times before I finally gave up and let it be free; I preferred this one fresh (and left the fresh rating), but still enjoyed the oak characteristics and brawny tartness which seems to have approached gueuze level sourness; we’ll see what happens with my last bottle in 2016…
Notes from Dec 2012
Hazed pecan body with 1.5 fingers of desaturated khaki head. Peninsulas and polka dots of lacing. Nose is sour green and red apples transitioning into sour cherries, smooth mint bursts, pecan pie, coffee cake, soft chocolate, silky oak, and brown sugar all layered together flawlessly. Tartness mingles with sweetness on a medium body with solid carbonation. Very good.
2013-02-02. Brown body with a nice tan head. 4+ Musty lightly funky sour aroma, malt. Quite nice 8+ Flavour is similar nice malt core, lightly funky sourness thoughout, modest fruit accents and light earthy notes. 8+ Smooth average body. Would definitely like to revisit this one. Bruna con abbastanza schiuma mediamente persistente. Aroma acido con caratteri che ricordano frutta secca soprattutto noci. Ingresso in bocca acido con un intermezzo di frutta secca, vaniglia e cioccolato. Il retrogusto e caratterizzato di nuovo dall’acidità pulita da un leggero sentore erbaceo. Buon corpo, di facile beva e con una carbonazione per niente invadente. Un ottima bruna fiamminga. Provatela.

Pours hazy dark orangish brown with small tan head. Smell is a blend of wood, dark fruit with nice sour notes. Taste is nice sour, wood, dark fruit ending dry crisp & woody. Body is light and carbonation is active. Overall I really enjoyed this beer.
