Exilior is a Berliner Style Weisse brewed using a traditional 3 part decoction using the thin part of the mash in each decoction. The hops are added and boiled during the decoction process. Unboiled, the beer then sits in the coolship overnight.

The next day it is transferred to the tank and pitched with some house yeast making this a semi spontaneously fermented ale. It is then matured in wine barrels for at least 6 months. Batch #1 was matured in a mix of Syrah & Chardonnay barrels.

Available this Saturday, December 12th both on draft and in bottles. 750ml bottles, $13, limit 6 per person.

hazy gold, thin dense white head lasts. Strong rice and green-Apple nose, heavy wax. Sweeter soda-like front palate, lemon-lime high citric acid tingling jowls. Wax with warmth particularly across mid palate, finishing green with plenty of zest, thin and fizzy light rice elements.

this beer lifts. Do you lift bro? YES. Strong and bright/fresh chardonnay flavors, minerally and grapey. Then the base is tart and clean. Incredible barrel aging here, I loved it, tons of flavor and drinkability.

Bottle opened at Stoneface. This is a wild, imaginative, crazy beer and I loved drinking it. It’s pretty aggressively sour, especially for the style, but I enjoyed the tartness. The wine barrel aging deepened and complicated every part of the beer too, adding a lot of wood flavor and deepening the malted notes. Wacky and truly wonderful.
