COMMERCIAL DESCRIPTION
For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do its thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

UPDATED: NOV 23, 2015 Awesome...Fruity and funky. Citrus lemon. Its good. I like it more as it lingers in the glass. it doesnt scream its own name so that youd remember it. ...on second thought. This is a good beer.

Pours a cloudy, pale yellow with thick, white, persistent foam. Some pale malt in the nose but lots of citrus / mango hops and yeast. Medium body, active fizz and slightly watery texture, finishes fairly dry and astringent. Cold, the beer tastes much like a citrusy IPA with hints of esters and mineral. As it warms, the yeast profile becomes more dominant and balances the hops better. The label calls it a farmhouse beer and it is apparently brewed without heat. The Crystal hops are a good touch that creates a good balance, but it also raises the question of what the beer might taste like without the dry-hopping. A slight outlier in the saison family, but well done.

2016/12/21 - Pours a hazy deep straw colour with a thick, foamy, white head that slowly reduces and leaves moderate lacing. Aroma is yeast, spices, bubblegum, banana, grain, orange peel and musty funk. Taste is musty funk, tropical fruit, banana, orange, yeast, cinnamon, cardamom, light bubblegum and floral hops. Mouthfeel is medium and silky with sharp carbonation and a dry, mildly herbal and fruity finish. Really nice fruity and yeast notes.

four pack from Mile High. Pours a hazy deep gold, almost copper, with a small white head. Aroma is potent with peppery, floral notes abound. A bit of honey and assertive orange peel come through. The palate is pretty full for the style with a pleasant level of carbonation. Lots of orange and honey are in the flavor with plenty of pepper and barnyard. The finish isnt quite as dry as I like my saisons, but it doesnt detract from the beer. Passion fruit notes develop halfway through the glass.

"Enjoy by 27-Feb-17." Color is pale creamy lemon, thin velvety head that lasts qute a while. Lemon peel, yeast, bubblegum, citrus pith. Lots of ester flavors -- banana, pear, booze. Spice, straw. Slightly sweet with a dry, slightly astringent finish. Lots of esters in this one.
