Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, its hard to make.

Bottle from CYO. Pours a hazy, glowing straw with a finger of foam that lingers. Tart wheat nose, with some faint yogurt and grass. Lots of carbonation that lingers...even after 30 minutes quite overcarbonated it seems. Light bit of smoked malt, coriander seed, juniper. Light finish with low tartness. I like it.

Decent beer. Aroma Wasnt that good. Smelled like a stale pale layer. Like the smell of a day old beer left in a red plastic cup at a frat party. Pour was a nice hazy light gold with a thin white film for a head. Taste was better than the aroma. Lightly acidic with the wheat and yeast just hinting. Nice strong and biting carbonation. Lightly tart finish. Refreshing but a little too simple

Pours a cloudy, bright yellow with a small white head. The aroma is tart is a little on the mild side. Its mostly grape and wheat, along with impressions of orange, lemon, and floral hints. The taste has a very mild sweetness. Its tart as expected, but I find it subdued. I actually find it very close tothe nose. Orange and lemon dominate, with wheat and floral hops. Tart lemon aftertaste sticks for awhile. The body is light, with a thin, sticky texture, and average carbonation. Not bad and easily drinkable.

Hazy pale yellow with fleeting foam. Salty wheat cracker, bready, coriander aromas. Smooth medium body. Salty, tart wheat, mild lactic, fruity coriander flavors____good.

Cloudy, murky, dark yellow pour with little foam. Distinct lacto tartness in the nose with some spice, white grape, a little lemon and some brine. Light to medium body, crisp fizz and slightly slick finish. The nose suggests a sour beer of some kind, but the taste delivers a smooth, spicy (coriander) wheat beer experience, which tends to persist to the finish. As it warms up a little earthy, wet hay aspect starts to emerge. A good sour beer / wheat beer hybrid, very good for summer. A pleasant surprise.

Bottle. Pours a clear light orange with a very thin white head. Aroma of light fruits, sour wheat malt, apple, light spices. Flavor of wheat malt, light fruits with a faint sour prickliness, coriander. Lots of wheat malt, not really sour, kind of bland. An ok beer, not very similar to other goses that Ive had. 6/4/6/4/13 (3.3/5)
