COMMERCIAL DESCRIPTION
Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it’s hard to make.

From a bottle poured a straw color with a fair amount of head. Light malty flavor with a lingering tart finish.

AROMA: Moderate fruity aroma of lemon. Light salt, coriander and lacto presence complement the fruity scent. Acidity is low. A general, clean, sea breeze character. 9/12

APPEARANCE: Pale gold hue; full haze. Large white foam mostly dissipates. 2/3

FLAVOR: Lemon pith fruity flavor throughout. Moderate sourdough bread malt & wheat base. Salt presence is quite subtle and becomes a bit strong on the finish as does a light sour bite. There is no lingering acidity or cider character. Little bitterness; no hop distinctiveness (none needed). Overall wild character is tame for the style, but palette exemplifies the style well. 15/20

MOUTHFEEL: Medium-light body; medium carbonation. Feels a little calm for the style. Refreshing and crisp with clean aftertaste. Highly sessionable at only 4.3% ABV; would be better served in cans than in bottles. 4/5

OVERALL IMPRESSION: Probably an accurate recreation of the original Leipzig style; just a tad mild for American palates that want more sourness and tartness. Drinkability is fantastic, though. 7/10

Bottle from CYO. Pours a hazy, glowing straw with a finger of foam that lingers. Tart wheat nose, with some faint yogurt and grass. Lots of carbonation that lingers...even after 30 minutes quite overcarbonated it seems. Light bit of smoked malt, coriander seed, juniper. Light finish with low tartness. I like it.

Decent beer. Aroma Wasn’t that good. Smelled like a stale pale layer. Like the smell of a day old beer left in a red plastic cup at a frat party. Pour was a nice hazy light gold with a thin white film for a head. Taste was better than the aroma. Lightly acidic with the wheat and yeast just hinting. Nice strong and biting carbonation. Lightly tart finish. Refreshing but a little too simple

Pours a cloudy, bright yellow with a small white head. The aroma is tart is a little on the mild side. Its mostly grape and wheat, along with impressions of orange, lemon, and floral hints. The taste has a very mild sweetness. Its tart as expected, but I find it subdued. I actually find it very close tothe nose. Orange and lemon dominate, with wheat and floral hops. Tart lemon aftertaste sticks for awhile. The body is light, with a thin, sticky texture, and average carbonation. Not bad and easily drinkable.

Draft - Light and flavorful tartness. Please no grapefruit taste to it. It sticks to the palate as well which makes the tartness linger as well.

Hazy pale yellow with fleeting foam. Salty wheat cracker, bready, coriander aromas. Smooth medium body. Salty, tart wheat, mild lactic, fruity coriander flavors____good.
