Mazer Cup 2013. brilliantly clear rich gold body with thick legs. both the honey expression and chile pepper expression are rich and layered. very aromatic caramelized sugar, toasted nuts, burnt honey, nut oils and stroopwafels. oily and chewy and full. add in a bright chile pepperiness (though not a lot of chile pulp or heat, instead a lot like padron or shishito peppers), and it’s sweet, full and acidic and spicy enough to wash the sugar from the mouth in a vibrant, sharp and flavorful finish. clean and bright capiscumel. the honey character is superb and I enjoy high acid so no surprise this my personal favorite of the judging.

375mL bottle purchased for $22. Poured into HotD tasting glass. Dark golden - light amber color. The main interest in this drink is the pepper. It’s fekt, mildly but definitely there after the sweetness. All of a sudden you get this heat kick in the back of the throat. Doesn’t stick around long but you feel it. Otherwise, a sweet, thick sipping mead. Very nice as a dessert drink with a twist.

Pours golden. Aroma of darkened honey and light pepper. Flavor is honey, mild earth and caramel. Peppers appear in the middle and has an earthy burn through the finish. Tasty.

375ml bottle from the meadery. Pours a still, clear copper. Aroma is of honey, peppers, and faint caramel. Taste is a nice balance oh honey, caramel, and vanilla, with a long pepper finish. Very good interplay of sweet and spicy. Medium body.

Bottle at Orchid Cellar. Poured a still golden yellow color. Aroma was mild, almost unoticable pepper skin notes, honey, crisp sweet notes. Flavor was light peppery warmth. Heat lingers on the rear roof of the mouth, but it isn’t overpowering. Pretty tasty.

Great balance in this one. Spicy and wonderful, and comes together awesome. Yellow gold pour with great light spice mixed in with the sweetness. Lovely stuff. Bottle at meadery.

Bottle at Orchid Cellar as part of their tasting. Golden yellow. Aromas of honey and peppers. Tastes of honey, apples, light peppers. Medium-light body with a dry and peppery warm finish. Chili peppers are nicely balanced.

Bottle @ MJ’s house. Thanks. Clear golden pour with some nice legs. Mild pepper aroma, lots of honey, caramel, and some vanilla. Slight grass and a strong flower note. Flavor is sweet honey, light pepper, and very mild spice on the finish. Grass, flowers, and some caramel. A hint of vanilla as well.

Tasting at MD Wine Festival. Pours clear bright gold. Aroma is honey, pears, hot peppers, toast, and caramel. Flavor is smooth, sweet honey and brown sugar finishing with hot pepper spice that lingers nicely. Medium body. Pretty interesting.
