Otaru Weiss is made using a traditional Bavarian brewing method which requires more than 50% wheat (weiss) malt or more. We produce the Otaru Weiss so that it has a fruity, banana aroma. This occurs both because of the brewing method employed as well as the type of yeast used to ferment the wort. Otaru Weiss, like all traditional Weiss Beers, is top fermented. Fermenting weiss wort not only has a fantastic banana aroma, it roils with the large amount of CO2 gas it produces. This is a beer which you can not only smell, but actually hear and see ferment. The fermentation is fairly quick and the lager period is approximately two weeks. At Otaru Beer, the Weiss fermentation is very fast, compared with our other beers which take at least six weeks to produce. When we first made the Otaru Weiss beer in the Spring of 1996, it was only to be a seasonal beer, but because of the great demand for this seasonal beer, it became our third main beer type. If you have not ever experienced an Otaru Weiss Beer, consider it imperative to do so as soon as possible. It is an experience not to be missed!

Tap at the brewery. Crackling wheaty nose, with citrus, esters, light yeastiness, and a somewhat pungent mustard-like bit. Cloudy dark yellow, fat and firm head, thick lace. Light banana, very wheaty, touch of lemon, and a mild dry sort of finish. Thin-medium body. Very refreshing. Just a tad flat in the finish, but very good overall.

Pale and quite cloudy. Big frothy head. Big banana nose. Fizzy, quite sweet, bordering on unbalanced, mucho vanilla.

Bottle from Tokyu in Sapporo. Pours a hazy golden straw with a huge pillowy white head. Big creamy banana aroma with some clove, lemon and white pepper. Taste is more of the same. Body is a little light, but the flavor is nice. Peppery finish with some spice.

Bottle. Quite a nice weizen. There is a nice fruity taste to the beer, not that much citrus but plenty of banana.

Draught at Leibspeise. Creamy banana, clove, grassy hops, touch of lemon, earthy spice, dry finish. Good stuff, maybe not as rich as I hoped but a pleasant refreshing beer.

Backlog, bottled, enjoyed in 2008. Color is quite dark for a Weizen (ref: Schneider). Aroma’s of wheat, malt/grain, sour fruit. Flavor is true Weizen, wheat-malty, refreshing. Flavor lingers for a long time and there’s even a hint of bitterness.

My Bottom Line:
Herbal hops and meticulous banana esters greet healthy wheat and mild tartness in this competent Weizen.

Further Personal Perceptions:
-A creamy head of foam tops the cloudy beige, lacing in rings.
-The high carbonation on tap properly emulates the bottle-conditioned version. Good job there !
-Hops and wheat are lightly citrusy.
-The flavor profile is balanced and quenching.
-The finish is rather dry, with decent hop bitterness.

I had this on tap at the brewery in Otaru and again recently from a take-away bottle. It has a lightly spiced aroma, fairly weak for a hefeweizen but has the classic hefeweizen look pouring a cloudy golden color with lots of foam, good lacing and slow dissipated. The taste is an of an average white beer. Otaru seems to make solid beers to style. Overall, it is good but not outstanding.

UPDATED: FEB 16, 2014 Great foamy head - soft and ample. Soft clove/banana nose - great mouthfeel, which seems to be a trademark with Otaru. Well made - not overtly flavourful for the style, but very drinkable. Not as yeast as some examples, so it doesn’t outstay it’s welcome.

Tap at Leibspeise, Sapporo fall 2009. Banana, peach and wheat. Cloudy, orange yellow, golden cream. Creamy mouthfeel. Sticky fruitsalad flavour. A bit dusty.
