COMMERCIAL DESCRIPTION
The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 was made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl was made with ’Quetsche véritable d’Alsace’.

UPDATED: MAY 15, 2013 Zythos Bierfestival 2012, Leuven, Belgium. Big thanks to Sebletitje for this. Sebastian ROCKS IT as usual. It pours opaque looking copper with loose tan head. The aroma offers up faint musty prunes and modest sour and tart notes moving toward some woody notes. The taste begins tart and moves into sour notes nuanced by vinegar and fruit skin like tannins. It then heads into a dry finish thinly ringed around the edges by a light sense of some sort of vague fruitiness. Could use a bit more prune influence in the taste. Good stuff nonetheless. Can’t wait to try one with a bit more cellar time. Lovely brew. I’m really enjoying this brewery.

Had a 2015-2015. Very lively for a Lambiek. Aroma is plums with funky lambiek. Rather complex velvety palate with soft sour. Taste is plums with horse blanket lambiek. Blends really well.

750ml bottle share at 2. Bielefelder Bierfest. Slightly cloudy, brass colour with with small, bubbly white head. Tart-ish vinegar aroma, some fruit acid but no fruity flavours. Taste is sour, vinegar sourness, fruit acid, no hints of plum, a minimally funky and woody touch.

The plums are not that harsh, but it is there. Lightly coloured. Sourness is strong.

Labels says 2013-2014, ingredients list purple plums, best before 17/06/2024. Pours a hazy dark amber with just a little off white head. Nose is a little bit of plum perfume, some uriney horesyness, a little lactic tartness. Flavor is up front zingy lactic tartness, but then slightly more fruity, bright red fruit, then back into the zingly lemony acidity. Finish is the most interesting part, it's long and dry, with definite plum flavor, but also some plum skin tannins that complement the acidity nicely. Cheers to no more uni! A delicious beer that's definitely different from the run of the mill labic.
