COMMERCIAL DESCRIPTION
The Quetsche Tilquin à l’ancienne (6.4% alc / vol) is a spontaneous fermentation beer obtained from the fermentation of destoned fresh purple plums (Quetsche véritable d’Alsace, close to the Damson) in a blend of 1 and 2 years old lambics for a period of 4 months. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 3 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is slightly tart but also fruity and round which makes this Quetsche à l’ancienne may be more accessible for non-experts or less sophisticated palates. It also has a slight dryness from the skin of the plums. The nose perceives a plum brandy perfume.

First batch (2012) with a BB date of 23/02/2022 was made with ’Prune de Namur’ and limited to 500 bottles.

Second batch (2013) limited to 5000 * 75cl and 10000 * 37,5cl was made with ’Quetsche véritable d’Alsace’.

From bottles, at the brewery. Hazy orange-amber with the impression of a pinkish hue. Nose of plum liquor, lemons, grapefruits and must. Sparkling and tart, floral and juicy, with the suggestion of red-grapeskin tannin. Finishes dry. That perfumed impression of fine plum schnapps is pleasant and stands throughout. Superb piece of work, an interesting and somewhat intense drinking experience.

Lightly fruity aroma with a vinegar background. Taste is full of sour unripe plums that blows out with sour blast in the corners of ya mouth

Bottle 2015-2016 (BB: 19/01/26). Pours hazy orange with small white head.Aromas of wood, bread and plums.Medium body with moderate acidity.Amazing taste of a wine character.Plums, grapes, funk and some wood.All nicely balanced.An amazing beer.

Aroma is light fruity and acidic, with light citrus and wet wood. Taste is absolutely wonderful. Tart and citric, yet surrounded by a sweet cloak of plum juice and wood notes. Soft carbo. I love this stuff. Am I turning into a lamb(ic) of God?

Pite na Urusie. Pachnie stajnią i delikatną śliwką. Za to w smaku jest bomba - bardzo intensywna obora, niedojrzała śliwka, nuty agrestowe i winne. Szanuje w opór.

Wygląda niestety słabo, bardzo mętne, kompotowe. W zapachu piękne siano, kwasek i owoce. W smaku to samo i świetny posmak śliwkowy. Fest piwo.

2015/2016 vintage, had in 2017. Hazy, dirtied orange, tiny bit of off-white foam. Nose has rustic white wine funk, fermenting "pulpy" orchard fruit, like plums, sure, but it makes me think of ripe cherry plums rather than that. Chinese plum, faint yellow cherries, oaky vanilla, mold, salt, green hay. The funk takes center stage in the taste, with a sharp sourness, like lemon juice, with mild vinegary notes. Dirty barrel, white wine gone bad, mixed crunchy herbs, the regular lambic funk, but with a really nice twist in the end. A nice fruity, juicy undertone, that makes me think of Chinese plum and some nice grapefruit flesh, too. Aftertaste is pretty dry, but has lingering oak stave and sour funk. Medium to light body, spritzy carbonation. Great lambic with subtle notes from the added plums, but they’re somewhat special. Not bringing a lot in the mix, but the lambic’s already pretty complex as it is. Great!

Hazy orange with white head. Funk bomb, prunes, apricot, lemon and unripe fruit. Sour, fruity and lingering citric finish. Summer in a bottle.

Bu en cours de zythologie. Verre de 25cl issue d’une bouteille de 75cl. Couleur rosé/cuivre trouble ! Pas de mousse pas de bulles . Au nez : note fruité de la prune pas de doute ! Prune d’Alsace. Note acidulé et fruit macéré. Un peu de vinaigre. En bouche : note de vinaigre agréable pas trop présent. Note fruité prunes et abricot agréable et bien intense . Acidulé à souhait très carré et ronde. Préfère celui à une gueuze simple.
