beer is delivered in traditional 2cl glass at the brewery (straight from the wooden cask). appearance is a brilliant pale gold with a dense and creamy white head that retains super well and leaves gorgeous lacing. nose is a wonderful balance of grainy/grassy pilsner malt and the traditional spiciness of german noble hops. flavor is a superb balance of light, cracker-dry german malt and the pungently spiced flavor of noble hops. for such an over-all mild beer, there is a lot of flavor in there.

Wer nicht im Päffgen-Brauhaus eines der besten Kölschsorten probiert hat, ist selber Schuld. CHS_Colonia (4) - North Rhine-Westphalia, GERMANY - JUN 19, 2014 does not count
Das beste Kölsch in der Stadt. Sieht aus wie flüssiges Gold. Am besten schmeckt es im Stammhaus in der Friesenstrasse. scowlzineamg99 (8) - San Francisco, California, USA - MAR 1, 2005 does not count
Only available in wooden kegs at a handful of bars in Cologne. Worth seeking out. jokazi (8) - Sarasota, Florida, USA - MAR 17, 2005 does not count

Cushiony pils malts develop honeyed angles to envelop this masterful Kölsch’s herbal hops, as minute banana esters add depth to an already evocative quaff.
Further Personal Perceptions :
-A healthy head of foam laces endlessly atop the clear golden.
-The fluffy natural carbonation and lean residual sugars make for great drinkability. A veritable pillow of a mouthfeel.
-The herbal hop finish is levelled with the rest of the brew’s moderate intensity.
-Malts also offer cracker-like flavors.
-This one looked and felt like it was more loosely filtered than other Kölsches in town. In any case, the yeast seemed to play a bigger role in the aroma and flavor profile.
From the wooden cask at Max Stark and Gästätte Lommerzheim.
From cask at Paffgen, many glasses. Clear blond with creamy white head. Aroma is wonderfully grainy, slightly funky, freshly mowed grass, some lemon. Taste is rich cereal with a grassy bitterness and light honey. Medium body and carbonation, cushiony mouthfeel. Exactly how a Kölsch should be, very clean with refined grassy, cereal and honey notes. Highly quaffable. MoritzF (9851) - Ottobrunn, GERMANY - MAR 15, 2005
My favorite domestic Kölsch because of its hoppy style. Lightly malted, crispy and wholehearted (as a Kölsch can be). It is normally only available in wooden casks in a few pubs in Cologne (Hausbrauerei Päffgen, Brauhaus Salzgasse, Lommerzheim and Max Stark), but at Max Stark I have seen swing top bottles of Päffgen Kölsch a few weeks ago. Unavailable from bottle - I think only two "Hausbrauereien" sell it in Cologne. Very clean and crisp, easy to drink, but still strong. Usko (171) - Bavaria, GERMANY - NOV 27, 2013
Poured from a barrel in the brewpub in Köln. Golden color, white and long lasting head. Aroma of malt, grain, some bread and grassy/herbal hop notes. Taste is heading in the same direction, but malty notes dominate.Balance is just perfect, so much taste and so good to drink, love it!
