COMMERCIAL DESCRIPTION
Back in the day, Michael Peticolas’ brother, Charlie, was a cop and COPS filmed a few of his arrests. The best of which involved a deadbeat considering resistance to his arrest. With baton drawn, Charlie demanded "Sit down or I’ll SIT YOU DOWN!" Since the episode aired over 10 years ago, we’ve uttered the line a million times to one another and laughed every time. We’re paying tribute to that line by using it to name our Imperial IPA. A big beer that will sit you down if you don’t do it first. Ha. Call it Sit Down for short. As for the beer itself, the intent is to exhibit the fresh and bright character of the hops. We dry hopped it with over a pound of hops per barrel of beer. It’s gold in color and the floral ester aroma is high. The hop bitterness is high, but not at all harsh. The hop flavor is high, fresh, and lively. Yet with all of our beers, it’s all about balance and this one is no exception. The malt character is fairly high and provides a tremendously full mouthfeel. Finally, the alcohol in this beer is intentionally present (and delicious). When it comes to food pairing, IPAs are best when paired with spice. Indian foods are often complex and focus on spices and herbs. As a consequence, the hop aromatics of the IPA can result in great harmony with spicy Indian dishes. Otherwise, find yourself some spicy Thai or jerk chicken.

Light melon aroma. sweet full bodied. Ends with a hop bite. This is a solid melon like DIPA. Maybe it should be called sit down or I will beat in your melon head. Enjoyable.

Sampled at The Thirsty Growler. Great dank hop aroma, grassy, herbal, with tropical fruits and pine. Hazy golden amber with creamy lacing head. Medium-heavy body with medium carbonation. Sweet but not cloying, big hop flavors and good bitter finish. Nice lingering bitter after with alcohol warming.

Sampled at GABF 2015 in Denver. In the tasting glass orange with a white head. Lot of aroma here with citrus, floral, and pine hops, some tropical fruit including pineapple. Medium body. Resinous mouth feel. Flavor is intense with a lot of citrus and pine and there is a bitter pine laden finish. Darn good stuff.

On tap at Hooligan’s. Amberish pour with a white head. Aroma is booze, grain, pine sap, and oranges. Taste is more alcohol, caramel, maybe baking spice?, and fruit. Bitter finish.

(Draught) Pours a burnt orange body with a medium off-white head. Aroma of pine, pineapple, grapefruit, lemon, grass, and weed. Flavor of herbs, grass, pineapple, lime, grapefruit, pine, and caramel with a dry, bitter finish.

Tap at The Common Tabe Pours a deep copper with a thin white head. The aromas are grapefruit, grass and floral notes. The mouthfeel is bitter and dry with a medium body and good carbonation. the alcohol is really present in this beer! Cheers!

On tap at Lakewood Growler - deep orange with a small head and lacing. Has a dry citrusy flavor but also somewhat of a rubbery finish. Would like to try this one again maybe at a colder temp.
