COMMERCIAL DESCRIPTION
An experimental beer that is our own creation; mashed overnight to allow lactic acid fermentation.

This process increases the acidity of the mash to a pH of 3.5 (most of our mashes have a pH around 5.2).

This acidity provides a pleasant level of tartness that plays nicely off of the 170 pounds of sweet cherries we added to the fermenter.

On hand at Wynkoop’s United Tastes of Belgium 2012. Murky pinkish ruby with an aroma like sour funky cherries. Taste was much the same with little or no nuance. Just some light bodied, semi-tart, semi-sweet cherry tone. Meh.
