Our Imperial or Double IPA uses two varieties of hops known for their citrus-like flavors. Sorachi Ace, a Japanese variety that provides a lemony flavor and Mosaic that imparts grapefruit and orange flavors. The hops are balanced with a hearty amount of malt. It has higher alcohol content and is served in a snifter.

Sample at the brewery. High creamy off-white lasting head. Clear dark red body. Cinnamon herbal fruity aoma and flavor with a fair amount of hops bitterness, low carbonation and a long finish.

10 oz at the brewpub. Pours super red with a very small head. The Sorachi is way up front in the nose. Loads of dill weed with lemon and a nice, juicy tropical fruit background. The malts are a little heavy, but not to take away from the hops. Carbonation is a little low. Tons of Sorachi in the flavor, clean citrus and dill is very apparent. Finish has hints at berries and an array of herbs. Weird, tasty and clean.

On tap at brewery, poured a deep cloudy orange hue w/ thin white head. Big tangerine citrus aroma. Initial flavor is moderate sweet w/ a bold bitter finish of medium duration. Price: N/A Purchased: Oct. 9, 2013 Consumed: Oct. 9, 2013 Misc.: Someone else bought the beer for me Poured a reddish copper color with 1-to-2 fingers of khaki white head. Good lacing along the sides of the glass. Above average retention on the top all the way down. Smelled grapefruit, citrus, floral hops, slight butter, pine and lime. Tasted butter, lemon, earthy grass hops, floral hops, citrus hops and grapefruit. Medium body. Creamy texture. Average carbonation. Long, bitter finish. This was a really good Double IPA. I’d certainly have it again.

Ported from BA. Appearance: A thick red color, kind of like a clear brick. orange/brown around the edges. About 1 1/2 fingers of head, but I have small hands. It faded fairly quickly. Smell: Citrusy, right off the bat. It’s pretty clear that this is a Citra DIPA. Not much malt aroma to speak of. This is all about hops and grapefruit. Taste: Citra hops come through right away, and are amazing. They do eventually fade and you get a hint of malt sweetness mixing in with a bit of pine flavor. In the end, a very balanced bitterness that doesn’t last very long. Mouthfeel: Full-bodied. Somewhat oily and holds a medium-carbonation. Drinkability: High. It’s high in alcohol (the current batch is actually 9.5%) but the alcohol flavor doesn’t invade too much. Since the bitterness tastes so appropriate and doesn’t last, it would be a good intro for someone just trying IPAs or DIPAs. In a word: Delicious.

Aroma is heavy malt (cookie, caramel, toasted), heavy hops (floral, citrus), and average esters (apple/pear) with notes of alcohol, peach, and pineapple. Flavor is heavy malt (cookie, caramel, toasted), heavy hops (floral, citrus, spicy), and average esters (apple/pear) with notes of alcohol and pineapple. Full body, medium warmth, carbonation, and creaminess with a dry and biting finish.
